Study On Growth Performance And Meat Quality Of Yangzhou Meat Geese And Its Crossbred Combinations

In this study, Yangzhou Meat Geese (A(?)×A(?) and B(?)×B(?)) and four crossbred combinations (B(?)×A(?), K(?)×A(?), D(?)×A(?) and C(?)×A(?), the same as below), A total of six geese populations were selected as test materials to study their growth performance, slaughter performance, serum biochemical indicators and meat quality, so as to breed better crossbred combinations. The results showed that:1.The growth performance:The survival rates of Yangzhou Meat Geese and their crossbred combinations in the breeding period (1-21 days of age) were higher than 90.0%. The survival rates of the test groups B X A, K X A and two control groups were higher than 95.0%, and other test groups were lower than the control groups. The survival rates of 10 weeks of age were lower, and the test groups B X A and K X A were higher than those of other test groups, but lower than those of the two control groups. At 10 weeks of age, no matter male or female, the body weight of the test group K X A was higher than other test groups and the control group B X B. Each test group at 0-6 weeks of age, the average daily gain increased gradually, while At 6-10 weeks of age it decreased gradually, and the average daily gain at 2-4 weeks of age was faster than other groups. At the start of 2 weeks, the average daily gain of the test group K X A was higher than other test groups, but lower than the control group B × B.2.The slaughter performance:The ratio of breast of the test group B X A, the geese or male and female mixed, was significantly or very significantly higher than other groups (P<0.05 or P<0.01). The dressing percentage, percentage of half-eviscerated yield and percentage of eviscerated yield of the test group K×A, male and female mixed,were significantly or very significantly higher than other groups (P<0.05 or P<0.01), The ratio of leg muscles of the grander was significantly higher than other groups (P<0.05). The percentage of half-eviscerated yield and percentage of eviscerated yield of the geese in the test group D x A were higher than other groups (P<0.05).The ratio of breast and abdominal fat of the geese in the test group C x A were significantly higher than other groups (P<0.05)3.The serum biochemical indicators:The AST and TG level of the gander in the test group B×A were significantly or very significantly higher than other groups (P<0.05 or P<0.01), the GLU, TG and CHOL level of the geese were significantly higher than the other groups(P<0.05). The TP, ALP and LDLC level of the grander in the test group K x A were significantly or very significantly lower than the other groups (P<0.05 or P<0.01), the AST level of the geese were significantly higher than those of the other groups (P<0.05). The ALT and CHOL level of the gander in the test group D×A were higher than other groups (P<0.05),The ALT, TP, CHOL and LDLC level were significantly or very significantly higher than other groups (P<0.05 or P<0.01)4.Conventional meat quality:The pH value of breast and leg muscles of the grander in each test group at 12h were significantly lower than the two control groups (P<0.05); the pH value of breast and leg muscles at 3 time points, no matter male or female, were significantly lower than the two control groups (P<0.05); The pH value of breast and leg muscles in the test group B×A was lower than other groups. The color L* value of breast of the geese were significantly lower than the two control groups (P<0.05), the color a* value were significantly higher than the two control groups (P<0.05);The color value of L*, a* and b* of the muscles in each test group were significantly lower than the two control groups (P<0.05). The rate of water loss of the leg muscles of the geese in each group were significantly higher than the two control groups (P<0.05), the water loss rate of leg muscles in control group A x A was significantly lower than those of the other groups (P<0.05). The shear stress of breast, the grander and male and female mixed, were higher than those of the leg muscles (P<0.05 or P<0.01). The moisture water of leg muscles in the test group K×A, both male and female, were higher than those of other groups. The crude protein level of breast and leg muscles of the geese in the test group B× A were significantly higher than the other groups (P<0.05). The crude ash level of the leg muscles in test group B×A were significantly or very significantly lower than the other groups (P<0.05 or P<0.01), the crude ash level of the breast and leg muscles of the geese in test group D x A, after male and female mixed, were significantly or very significantly higher than the other groups (P<0.05 or P<0.01). The crude fat level of the breast in test group K x A, the geese and after male and female mixed, were significantly lower than the other groups (P<0.05)5.Chemical composition connected with the special flavor and delicate flavor in muscles: The amino acid, Asp, Thr, Ser, Glu, Val and Ile level of breast of the grander in test group B×A were significantly or very significantly higher than other groups (P<0.05 or P<0.01), the EAA level were higher than the control group B×B; The TAA and DFAA level of breast of the geese in each test group were lower than the two control groups. The thiamine level except the breast of the geese in the control group B×B were significantly or very significantly higher than those of the other groups (P<0.05 or P<0.01), the thiamine level of breast in test group D x A, both male and female, were significantly higher than the other groups (P<0.05). The IMP and IMPc level of the leg muscles of the grander in two control groups were significantly or very significantly higher than those of each test group (P<0.05 or P<0.01), the INO level were significantly lower than each test group;The IMP and IMPc level of the breast in two control groups, male and female mixed,were significantly or very significantly higher than the test groups (P<0.05 or P<0.01),the IMP, HYP and IMPc level of leg muscles were significantly or very significantly lower than each test groups (P<0.05 or P<0.01). The cholesterol level of breast and leg muscles of the grander in test group B x A were significantly or very significantly higher than the other groups (P<0.05 or P<0.01). Partial fatty acid level in test group B x A generally significantly lower than the other groups (P<0.05), partial fatty acid level in test group K x A generally were significantly or very significantly higher than other groups (P<0.05 or P<0.01), on the whole, the test groups compared with the control groups, the fatty acid level were lower relatively.
