In this paper, the study aimed to determine the fattening cattle’s production, slaughter and the analysis of the physical and chemical indicators that feeding with three kinds of banana stems and leaves silage(banana stems and leaves + 4% corn flour, 70% banana stems and leaves + 30% straw, 70% banana stems and leaves + 30% sugarcane tip), and then compared the effect of three kinds of diet, thus discussing three kinds of banana stems and leaves silage impact for Yunnan Cattle growth performance and meat quality, then compares their advantages and disadvantages. The test is divided into three groups according to the diet structure. When was feeding end and then slaughter, segmentation and analysis its physical and chemical indexes. The results show that three groups mixed with sugar cane tip the banana leaf best, meat production performance is best; The above results show that the three kinds of banana stems and leaves silage feeding of Yunnan Yellow has good Slaughter performance and good production performance, good beef quality and rich nutrition with the higher percentage of high-grade meat carcass, eventually level(3 + 1) for A high quality standard. Including group 1 of beef cattle fattening effect is best, meanwhile have the highest feed utilization and meat quality relative to the optimal. And group 1 with highest protein content, amino acid score higher than that of the ideal model, belong to high quality protein. Above all shows that using corn flour mixed with banana stems and leaves silage is best;On the fatty acid composition, three kinds of banana stems and leaves silage fattening beef have suitable proportion of SFA, PUFA and MUFA, the proportion of n-6/n-3PUFA and PUFA/SFA are recommended values in the ideal range, including the banana stems and leaves silage mixed with straw cattle fatty acid flavor is best, and mix with corn beef fatty acids taste is best. Three kinds of diet feeding the cattle all can make the high quality with reasonable healthy fatty acid composition of meat. In this paper, the results can be continue to develop high-grade quality beef that feeding with the banana stems and leaves for reference.
