Deoxynivalenol that be found in wheat, corn and other food crops, is a common mycotoxins and has seriously affected the development of the global foodstuff industry and the people’s health. At present, there are many methods to study the degradation of deoxynivalenol, such as physics, chemistry and biology. But,there are some disadvantages in those methods. On the one hand, the structure of deoxynivalenol can not be directly destroyed by those methods, and deoxynivalenol is transferred to other foods. On the other hand, the secondary pollution of foods and foodstuff would be happened with those methods.High voltage electric field technology that is a physical method with the advantages of safety, energy saving, and no pollution, has been used and applied in the field of sterilization (microbial disinfection) and food preservation.This topic, based on high voltage electric field and power electronic control technology, studies the key technology of generating high-voltage electric field and collecting experimental data about the electrical treatment experiment device in order to meet the research needs of grain and oil food safety.The research work includes three parts, which are the research of high-voltage Stimulus, the design of detection and control subsystem and the design of monitoring and control subsystem of PC. Firstly, the selection and design of the main circuit, the drive circuit and the protection circuit are completed. Secondly, The task that voltage, current, temperature and humidity of the experimental device was collected, is completed in detection and control subsystem with micro controller STM32F103. And control of voltage of the device is completed. Third, the subsystem of monitoring and control with PC achieves the monitoring, displaying and archiving function of the important device parameters and completes the setting and control of voltage signals.The key technology of the electric treatment experiment device for wheat scab was studied, and the principle prototype of the electric treatment experiment device was designed in this topic.The electrical treatment experiment method is a new method for the study of the degradation of deoxynivalenol and high voltage processing technology applied to bulk grain and liquid grain and oil food safety.
