Ginger(Zingiber officinale Rosc.)is the rhizomes of zingiberaceae perennial herbs and ithas a long history for the significant effects as a medicinal material. It has many efficacy, suchas: warming middle-jiao to disperse cold、reviving yang of resuscitation、resolving phlegm anddrying damp、used in the treatment of deficiency-cold of spleen and stomach、cold and pain inabdomen.. Modern study found that ginger has various biological effectiveness, such asoxidation resistance, free radical scavenging, cholesterol lowering, antiatheroscloresis, liver andgallbladder-protection, etc.There are more reports on the compare of the contents of each chemical composition inyoung ginger from different producing areas、young ginger and dried ginger than the reports onthe differences between the chemical composition contents in young ginger and old ginger inprevious studies. Here we take the UV-light Photometry to ensure the total flavonoids, totalpolysaccharides, total polyphenol and gingerols acquired in young ginger and dried ginger, anduse the HPLC and full-automatic amino acid analyzer to analyze the contents of the lowmolecular suger and Water-soluble free amino acid in the two, so as to compare the data of thesesix compositions. The analysis result shows that the contents of the total flavonoids、totalpolysaccharides、total polyphenol、gingerols acquired are3.92%、12.47%,5.07%、4.93%,1.27%、3.62%in young ginger and old ginger; the contents of gingerols acquired are0.74%、1.97%,2.31%、3.02%in young ginger, old ginger and dried ginger; the contents ofwater-soluble free amino acid in young and old ginger are1.01%、10.11. The results show thatall the contents of the chemical components of old ginger are higher than young ginger exceptthe total polysaccharides.We try to make sure which ethanol extract’s antioxidant ability is much more strongerthrough the way of DPPH and ABTS. The result shows that both young ginger and old ginger soas their dried ethanol extract all have the antioxidation activity and the scavenging ability isrelated to the amount of the extract. When the concentration is5mg/mL, ginger, ginger and itsdrying the clearance rate of young ginger, old ginger and their dry matters are about90%,slightly less than positive medicine (BHT).We compare the inhibiting effects of the ethanol extracts of the young ginger, old gingerand dried ginger to staphylococcus aureus, escherichia coli, pseudomonas aeruginosa andbacillus subtilis through the antimicrobial test in vitro. They show different inhibiting effects tothe four germs, from strong to weak, they are ethanol extract of old dried ginger, young dried ginger, old ginger and young ginger.Through the determination of the activity of tyrosinase, the inhibiting effect of ethanolextract of young ginger, old ginger and dry ginger to tyrosinase were compared. The resultsshow that the samples of tyrosinase were all have certain inhibition. Arbutin has strongestinhibition, the value of IC50is0.001mg/mL; Second, the values of IC50of dry young gingerand dry old ginger were37.24mg/mL and38.91mg/mL; yang ginger and old ginger have weakinhibition, the values of IC50were44.15mg/mL and46.42mg/mL.Through ultraviolet spectrophotometric, it determined the ultraviolet absorption of youngginger and ethanol extracts of dry ginger, the UV absorption rate was slightly higher than the80%in UVA, UVB area, and the scanning ultraviolet absorption rate was close to80%in fullwavelength, but did not reach80%, and the rising trend was not obvious. The results showedthat the UV absorption ability of them is weak.In this paper, alcohol and carbon tetrachloride induced chronic liver injury in mice as amodel group, and DDB dropping pills as a positive control group. Compare the protective effectof young ginger and old ginger powder on liver injury. After four weeks of treatment, AST andALT levels are decreased in the positive drugs and sample groups. The distinction between theremaining three groups were significant (p<0.05) except of low-dose group of young ginger;improved MDA and SOD levels in liver, The distinction between young ginger and old ginger inhigh dose groups were significant (p<0.05). The results showed that young ginger and oldginger powder could significantly improve the damaged liver, and high-dose treatment group ofold ginger powder has significant protective effect against chronic liver injury.
