A Report On The Translation Of Chongqing Jianghu Dish Names

With the rapid development of China’s economy and globalization, the catering industry has entered a golden age. China is a country with long history and vast land, the rich resources attracting more and more foreign tourists. As a branch of Sichuan cuisine and with long history, Chongqing Jianghu cuisine not only shows its unique charm of its cookery, but also a carrier of colorful folk culture of Chongqing and one of eye-catchers of diverse Chinese culture.There are many differences existing in Chinese and foreign countries. Facing delicious Chongqing delicacies, foreign friends fail to enjoy them for lacking proper English translation of food names, or they feel hard understanding the dishes content or get frustrated by the mistranslations of cultural connotation of Chongqing cuisine. Thus, as a communication channel, Jianghu dish names’ translations are becoming increasingly prominent and its translation and relative researches are of great significance.The original is a brief introduction to Chongqing Jianghu cuisine, which language is vivid and fluent, full of cultural factors and with wide range of Jianghu dishes. This report aims at translating the original and analyzing the translation by translation techniques. This report introduces the characteristics and trend of catering industry in the background of globalization; giving a general introduction to the background, significance and contents of the translation materials; presenting the translation process such as preparation, revising; summarizing difficulties including conveying cultural connotation, balancing form and meaning and avoiding cultural conflict; dividing the dish names according to their naming characters; analyzing the translation techniques like literal translation, literal translation plus notes, transliteration, transliteration plus notes and other techniques on the basis of the cases. In last part, the paper draws a conclusion.
