It is known that China enjoys a good fame of culinary kingdom. Chinese food has always served as an effective way for foreigners to get closer to China. With the documentary, A Bite of China II becoming a hit, Chinese food culture has become a hot topic in the world once again.Therefore, it’s important to translate the captions of the documentary. Not only is the translation helpful to spread the Chinese food culture, but also helpful to realize the aims of the documentary, to witness the people’s life through Chinese food and reflect the development of China from the people.A Bite of China II opens a window for people to learn about the real China and the Chinese culture. There are seven episodes in all. And the translator chooses the captions of the former two episodes as excerpts for translation. Because these two episodes mainly introduce the Chinese on the journey and their beloved nostalgic food, as well as the instruction of cooking skills and those Chinese who are involved in cooking. The topic is in line with the current real state that most Chinese people have to work or make a living away from home. In particular, in the second episode with a name of “Heart Message”, it is found that the heart message is the key to passing down the traditional skill of cooking between the masters and apprentices. What’s more, it is also the key to adhering to the master’s discipline and rules, cultivating the family tradition and developing the national tradition, which is in accordance with the social theme of contemporary China.It is known that a documentary is often developed with the real people and real events.And the caption is essential for a documentary. Because it can serve to narrate the story and supplement the information beyond the video. For this reason, the translator should pay full attention to this aspect and cultural differences, be discreet in translation to avoid the ambiguity and misunderstanding.And there are five parts in the report. The prior three parts are respectively the part of introduction, the task description and the quality-control of translation. The fourth part is the case analysis. In this part, the writer discusses examples at the level of word, sentence and paragraph.In terms of the culture-loaded words and some dish names, transliteration and free translation are adopted to keep the exotic flavor of the source language evoking the interests of the target audience under the guidance of the Skopos theory; in terms of sentences, some are translated into the fixed expressions to guarantee the acceptance of the translation; and paragraphs are translated flexibly with the addition of reference words or logic markers, together with words conversion to keep the cohesion and coherence. The fifth part is the conclusion. Through the report, it is intended to offer a relatively feasible English version for the captions; introduce the mosttraditional and authentic Chinese food to those who are interested in and also make them witness the development of China; to enhance the ability of translating, learn much more knowledge and broaden the horizon.
