Food safety problem is one of current hot issues of concern from all walks of life, and college canteen food health and safety problems is more important, it relates to the general teachers’ and students’ physical health and life security, need the attention of the whole society and attention.Therefore, study of college canteen catering health and safety issues, has very important practical significance.Based on a university canteen catering health and safety problems of zhejiang province as the research object, using literature research, market research and case analysis method, and closely combined with the actual working condition, based on the current catering health and safety of our country’s university canteen, current situation and existing problems are discussed in a comprehensive system of research. The main research contents and research results are as follows:First, health and food safety problems at institutions of higher learning in our country the status quo and main problems of the comb. Basically include: management system is not sound, backward food procurement mode, canteen food safety problems, such as processing status quo is not optimistic.The main problems are: the canteen health management system is not sound; College canteen food and food raw materials procurement model of security issues; College canteen food safety problems of the process; The size of the disinfection, cleaning facilities and quantity can not meet the needs;The dining room staff training, overall quality is not high.Second, catering health and safety issues at institutions of higher learning in our country causes were systematically analyzed. The results showed that the factors influencing the canteen food safety is the university itself, such as college dining room of food hygiene and safety value degree is not enough, investment is insufficient; Canteen food safety consciousness of the outsourcer indifference to management as the main goal; Production and processing, circulation and complex, food safety regulation is not in place; Canteen management stay experience management stage, the low quality of employees, system management implementation is difficult; Daily to the employees food safety education is weak, and so on, are all factors that affect the canteen food safety.Finally, in view of the catering health and safety issues in colleges of our country, puts forward some countermeasures to solve or improve some. Specific as follows: to improve college degree of attention to the food safety; Improve the food safety management system; In order to strengthen the management of the canteen management way; Market supervision department should improve the food safety supervision.In a word, college of health and food safety have been exposed in recent years, problems are still very prominent. Therefore, in the prevention of colleges and universities catering health and safetyissues, must be comprehensive grasp of colleges and universities, government, catering contractors three aspects of the power, through the positive, cooperative and thoroughly solve the food and beverage department of health and safety issues.
