The university canteen food safety problem mostly caused by many practical problems, such as the incompleted internal supervision mechanism, the canteen safety awareness and the university canteen privatization as well as the nutrition recipe, which directly hinder the development of the catering industry. Start from the aspect of the condition of reality, this thesis analyzed many kinds of possible existing factors which influence the university canteen food safety, and try to further research the causes, thus propose some more effective countermeasures.The canteen food safety problems mainly exist in the following aspect:First, food safety, also food security; the food we mentioned here means the food already have been cooked or processed which can eat directly. Second,the safety of the dining environment. Third,the safety of the raw materials, including the residual drug standard of the purchased items. From the survey result, food security is the major problem and it influenced by many factors. such as the non-standard operation, the additives from the process of food processing, food packaging material and the tableware, the contamination caused by kitchen utensil as well as all kinds of deliberately man-made fake and inferior products in the circulation filed of the market.There exist many potential hazards in the aspects of the university cafeteria food safety. First, the potential hazard in food safety which surveyed from the current food industry environment, also called food hygiene hazard. Second, the potential hazard of the dining environment Third, the potential hazard of the raw materials.This triple hidden danger seriously influenced the canteen food health and safety.And various reasons, including the subjective and objective reasons as well as the internal and external reasons, mixed together proved to be a contradiction aggregate restrict the development of the catering industry in university.The countermeasures on improving the university canteen food safety depends on the specific problem and the answer need to be found from the practical matters. In order to improve the university cafeteria food safety, this thesis puts forward the following five countermeasures, namely, the improvement of the canteen business model and the management system, the establishment food security system, the application of HACCP to the canteen food hygiene safety management.
