Food is not only the basic material to our human to survive and develop but alsothe most basic necessities in our daily life. Therefore, the discretion of the food qualityand safety is directly related to consumers’ health, the stability of the country and theprogress of the society as a whole. In the current market conditions, the competitionbetween enterprises in the food industry have gradually transformed into competitionbetween supply chains. However, don’t like industrial products, food is very high to therequirement of the supply chain because of its nature. The design of the supply chain istherefore more and more complex. Under the condition of increasingly complex supplychain risk events occur constantly too, for relevant enterprises in the supply chainusually leads to unexpected losses. So how to identify the potential risk factors for foodsupply chain, and they are scientific and reasonable evaluation, summed up the effectiverisk control Suggestions will become an important issue for the food supply chainmanagement.This paper summarizes the research situation of the food supply chain managementand risk management and characteristics of the research results at home and abroad aresummarized, and based on this carried on the thorough research. First of all, from thefood supply chain risk sources of main body is divided into three categories: risk factors,external factors, internal factors, and associated factors. On the basis of the threecategories of risk factors and carried on the thorough analysis to its, finally summarizessixteen kinds of specific risk factors. The economic environment risk, environment risk,legal environment, industrial policy risk, political risk, risk of food quality and flowtransport risk, production risk, inventory risk, financial risk, marketing risk, theenterprise moral hazard, the structure risk, trust risk, risk, information risk ofcooperation. After summarized the risk factors of four kinds of evaluation index,harmfulness, possibility and uncontrollability and infectious, again in accordance withthe relevant food industry on the basis of investigation and study on using analytichierarchy process (ahp) to identify the risk factors were evaluated. Established riskfactors for the hierarchical model, and calculates the weights of every risk under thefour kinds of risk attributes value, finally according to the calculation formula obtainedthe risk influence the risk of each risk factor in the food supply chain influence weight value. Finally, in according to the results of the assessment of risk factors for the order.Obtained in the food supply chain system influence on the safety of the supply chain ismore obvious several risk factors, in turn, is food quality risks, risks of logisticstransportation, cooperation risk, technology risk, trust risk, moral hazard, the structurerisk, information risk. And the influence of risk index put forward concrete Suggestionsfor the prevention of control has reached the purpose of supply chain risk management.
