Cuisine keeps growing and takes important position in our society through human history and civilization because the food is the basic demand of human being. After thousands of year’s improvement, we can see that Cuisine has also its own specific culture, the way of cooking, the management style in the kitchen, chief selections, innovative dishes etc. All these things separate the Cuisine from the culture of other industries. In today’s world, with Globalization, Cuisine has become an important stereotype to understand and reinforce the different culture. Cuisine has got most attention ever, and has been the manifestation of culture. We can also see the leadership style in this industry. In this thesis, the writer wants to analyze and research the management and leadership style in the cuisine industry, and focus on discussing the reason and necessary of these styles.In this paper, the writer first sores the leadership theory, then uses the interview method of qualitative research, selects samples of the chef and employee in China and foreign high end restaurant to analyse, to find out some behaviours or leadership styles in the high end restaurant culture, which are based on the certain work environment in the high end restaurant. After that, the writer explains the rationality of general management style in high end restaurant, and tries to find out the reason why they can last and be successful. Finally, the writer analyzes the discovery in the research base on the existed leadership theory, summarizes some precondition which ensure the general leadership style to be successful in the high end restaurant and gives some suggestions on leadership styles to the different types of restaurants. Hope to help the readers have deeper insight and understanding.
