Food was the most fundamental material requirement on which depended the survival and development of mankind.Its security directly affected the vital interests of the consumers.With the accelerating pace of economic globalization,vicious food safety incidents occurred frequently,which had brought a lot of lessons to the people and sounded the alarm for the government of many countries.Recently,the topic of food safety issues were talked a lot and many countries regarded it as the national public safety.The local government not only strengthened its supervision but also established food safety assessment system and early-warning mechanism to ensure the health and safety of the residents.At present,risk analysis was one of the common principles in the international community and was becoming an important support force for food safety supervision.Well,the framework of food safety risk assessment in China was far from perfect.Compared with the developed countries,we still had a large gap.Based on the grey system theory,we analyzed on the existing problems in our country and established a food safety risk assessment model to provide theoretical basis for the relevant department supervisions and management department.The specific research contents and conclusions were as follows:(?)Establishment of risk assessment model of food safety:Food science is a comprehensive subject,the internal of the system is bound to be incomplete,some of the information is unknown.The grey system theory is exactly based on the fuzzy information.So,this paper establishes a risk assessment model based on grey system theory,and the model is applied to the actual situation.The facts show that the model has a certain feasibility.(?)Program design of the whitening weight function in the model:The concrete steps are structuring sample matrix,judging the polarity,determining the boundaries,establishing whitening weight function,determining the weight of each index,calculating the comprehensive weight coefficient matrix and drawing triangle.Among them,the establishment of the whitening weight function to draw triangle of the process,in the multi samples,tedious data,order of magnitude is large or small,there will be many shortcomings,such as a large amount of computation,complex calculation process,low accuracy and low efficiency and so on.Therefore,this paper design a program based on java to overcome these shortcomings and enhance the work efficiency.(?)The application of the model:Analysis and risk assessment of microorganisms in drinking water in a city of China:A total of 676 samples are selected.The fraction defective of test results is 55.03%,the main influencing factors are aerobic plate count and the coli form groups.The 7th monitoring station of the total 9 from the city in central China in 2014 is the highest failure rate.The model is applied to the risk assessment of the 7th monitoring station.The results show that 79%of the samples are of low risk type,the whole is in a controllable state.The application of grey cluster method for safety evaluation of toxicological indexes in drinking water:The toxicological indicators easily lead to serious acute chronic diseases,such as fluorosis,tooth enamel,arsenic poisoning and so on.So,it is necessary to assessment the risk of toxicological indexes in drinking water.The indexes include fluoride,chromium and nitrate whose failure rate is of nearby 30%.The model is applied to the risk assessment.The triangle shows that only one sample is of high risk type,others are low,in line with the actual situation.Compared with the traditional zoing classification of single quatitative approach,the risk assessment model of food safety based on grey cluster theory is not only to be large amount of information,wade use,high comprehensive,but also more practical.The model provide theoretical basis for improving the framework of risk assessment of food safety.
