Agaricus bisporus is a well-known edible mushrooms, contains a variety of vitamins, dietary fiber, antioxidants and polyphenols et al.The output of Agaricus is 32%of the global total output of edible fungi. The severe loss of nutrients of Agaricus bisporus result in high moisture, delicate tissue and no significant protective structures presented on the surface of the cap. There are plenty reports domestic and overseas on storage of Agaricus bisporus, but lacking in in-depth research on short hypobaric treatments on delaying senescence mechanism.By exploring short hypobaric treatments on Agaricus bisporus to delay senescence mechanism, this paper provides a theoretical foundation of preservation and fresh-keeping of Agaricus bisporus.Agaricus bisporus were exposed to the different absolute pressures(30kPa,50kPa,70kPa)for 16h.Agaricus kept at standard atmospheric pressure(101kPa)served as a control All experiments at 0 ? conditions. In order to exqplore the delaying senescence mechanism of short hypobaric treatments on Agaricus bisporus, the effects of short hypobaric treatments on postharvest respiratory mechanism, lipid oxidation and secondary metabolites and related enzyme activity were studied, providing a theoretical basis of the application of short hypobaric treatments on storage of Agaricus bisporus. The main findings are as follows:(1)The effects of different pressures(30kPa,50kPa,70kPa and pressure)of short hypobaric treatments on postharvest respiratory and quality metabolism were investigated. The results showed that the effectiveness of different short hypobaric treatments were better than Ordinary storage, but the storage effects varied.Respiratory intensity and ethylene production rate could be inhibited under 50kPa,keeping respiration metabolism at a lower level and thereby reducing the loss of nutrients.Although a certain effects were observed under 30kPa and 70kPa,there was no significant difference between them.Considering some of the economic conditions and equipment factors,50kPa of short hypobaric treatments was preferable.(2)The impact of different pressures(30kPa,50kPa,70kPa and pressure)of short hypobaric treatments on lipid oxidation and related enzyme activity were studied The results showed that short hypobaric treatments induced the increase of CAT activity, maintained a relatively high SOD activity, which could timely remove free radicals, improving antioxidant capacity during storage of Agaricus bisporus. However, there were differences between different short hypobaric treatments on active oxygen scavenging system.Short hypobaric treatments played a role in inhibiting membrane permeability,MDA content and superoxide anion generation rate and H2O2 content during postharvest storage.Of the four short hypobaric treatments on the Agaricus bisporus, the effect of treatments under 30kPa and 50kPa were better.(3)The impact of different pressures(30kPa,50kPa,70kPa and pressure)of short hypobaric treatments on resistance and its related enzyme activity were also explored. The results showed that short-term pressure treatment delayed the decline in total phenolics and soluble protein, maintained a high level activity of POD and PAL activity. The effects of treatments under 30kPa and 50kPa were significantly higher than atmospheric pressure-treated group, while 50kPa treatment significantly induced GHT and GLU activity, and both enzymes played a synergistic effect, improving the common resistance of Agaricus bisporus. The short hypobaric treatments as a adversity stress, improved its resistance.Of the four short hypobaric treatments on the Agaricus bisporus, the effect of treatments under 50kPa was better...
