Goose blood is a kind of high protein material,the content of protein is up to 19%,and the content of hemoglobin accounts for two-thirds of total protein.Goose blood is rich for trace elements,and the highest content is iron,which is 20 times as much as iron content of lean meat.Goose blood can be used as a good source of iron supplement.China as the world's first big country raising goose,is rich for goose blood resources.But the use of goose blood is mainly in the primary processed goods such as blood tofu,goose blood catsup,blood meal,less involved in the aspects of iron supplementation.Because heme iron is easily absorbed by the body and it is not affected by the dietary structure and can promote bone marrow hematopoietic,so it has a very good effect on the treatment of iron deficiency anemia.Heme iron is easily absorbed by the body,and is not affected by the dietary structure,can promote bone marrow hematopoietic,so the treatment of iron deficiency anemia has very good effect,and is an ideal treatment for anemia drugs.In this paper,the alkaline protease was used to digest the goose hemoglobin into amino acids,peptides,heme and other things which are easy to be digested and absorbed.The iron deficiency anemia model was established in order to study the effect of iron supplementation.The experimental model was established by iron deficient diet.21 days SD rats which were weaned just fed with iron deficient diet,and the content of iron is 7 mg/kg.Because they don't like to eat,so a few days later fed with anthore iron deficient diet whice is purchased tang tong tie luo fei and the content of iron is 12 mg/kg.The aim is to consume iron stored in rats,which can shorten the time to build an iron deficient model.Because hydrolysate has a deep color,has a thick taste of blood,heme and polypeptide has a poor stability heme and polypeptide,biologicalhalf-life in organism is short,is easily degraded by acid and gastrointestinal enzymes,and the oral utilization rate is low,so the scope of application is limited.Hydrolysate is made into microcapsules by spray drying,in order to mask the sanguinary taste,maintain its biological activity and easy preserve.Porous starch adsorption hydrolysate was used as the core material,and arabic gum and maltodextrin were used as wall material.Optimize the process of enzymatic hydrolysis goose blood preparation high amino acid heme;By establishment the iron deficiency anemia rat model of SD,verifying the hydrolysate of goose blood has certain improvement effect on anemia rats;Optimize the process of enzymic hydrolysate's microcapsule by spray drying.By single factor and Box-Behnken experiment,it showed that the optimum process conditions of the alkaline protease enzymolysis goose blood: enzyme concentration 5%,hydrolysis temperature 50 ?,hydrolysis time 5.15 h and p H 8.80.The content of heme and iron ion in hydrolysate is 1.210 mg/ml,90 ?g/ml,respectively.Free essential amino acids accounted for 50.67% of the total free amino acids and 102.72% of the free nonessential amino acids.By the establishment of iron deficiency anemia rat model of SD and recovery experiment,it showed that goose blood hydrolysate has certain improvement effect on anemia rats,and it can improve the appetite,bodyweight,Hb value,erythrocyte count,the amount of iron stored in the body,the amount of serum iron and iron saturation of rats,and decrease the total iron binding capacity,obviously.It obviously improve the anemic syndrome of the iron deficiency anemia rats.By single factor and Box-Behnken experiment,it showed that the optimum process conditions of enzymic hydrolysate's microcapsule by spray drying were : arabic gum: maltodextrin=1:1,peristaltic pump speed 55 r/min,inlet air temperature 190 ?,solid content 25%,the proportion of core material and wall material 1:0.8 and the embedding rate was 88.12%.The moisture content,crude protein,heme,iron ion and free amino acid of microcapsule product is 4.04%,8.52%,9.15 mg/g,0.77mg/g,and 6.427 g/100 g,respectively.
