Food safety is directly related to the public's life and health and is a major issue concerning the national economy and the people's livelihood.Relevant government departments attach great importance to raising food safety risk management to an unprecedented height.With the concerted efforts of the government,China's food safety situation has generally shown a good trend of “overall stability and good trend”.However,public opinion is not in line with the overall good situation.The public's assessment of food safety status is not high,and even worse,these conditions all indicate that China's food safety risk communication is not effective.From the perspective of the public's trust in government and food companies,it is important to study the public's perception of food safety risks,so as to clarify the ways and strategic priorities of food safety risk communication.Specifically,this study is based on risk perception theory,trust theory,and public crisis management theory to study the content of government,corporate trust,and public food safety risk perception,and then analyzes the government,corporate trust,and public food safety risk perception.The relationship between them,on the basis of discussion of food safety risk communication and other related topics.The data of this study comes from a questionnaire survey of ordinary people in Lanzhou City.The questionnaire mainly includes two parts: the public food safety government,enterprise trust scale and public food safety risk perception scale.The data analysis methods of this study mainly include mean analysis,factor analysis,and multiple regression analysis.At last,this study gets the following conclusions:(1)The levels of public government trust and corporate trust are not high,compared to the lower trust level of corporate trust,which is in a state of “distrust”.The dimensions of government trust include concern,fairness,responsibility,and ability.These four dimensions all affect public trust in the government significantly.The study also finds that academic factors also have a significant impact on government trust;the dimensions of corporate trust include credibility,competence,information,and goodwill.Responsibility,the ability dimension in this study has no significant effect on corporate trust,and the remaining dimensions have a significant impact on corporate trust.(2)The level of public food safety risk perception is quite high,which is obviously higher than the “general” level.The public as a whole is concerned about the food safety situation in China.The dimensions of risk perception are severe,awful,visible,controllable,and probable.The severity dimension has the most obvious impact on the cognition of food safety risks,indicating that the public is extremely concerned about the serious consequences of possible accidents.The regression results of this paper find that government trust and corporate trust have a significant impact on public food safety risk perception,which also validates the “causal model”.Based on the empirical analysis,the paper finally proposes strategies for risk perception reduction and risk communication based on government and corporate trust,summarizes the deficiencies of this study,and looks forward to future research.
