This is not only a challenge which we should face to,but also a historical mission which we have to shoulder.Explore in work,study in practice.The starting point and the research central content of this paper is whether to set up a new major,how to set up a new major and how to construct curriculum to meet the local market demand for professional talents."By other's faults,wise men correct their own.".By the way of literature research,practice research,comparative research,we analyse the current domestic and international model of curriculum development,and related research in professional cooking,eventually,we adopt an advanced curriculum development model--DACUM Job Analysis Method which is very popular in the world at present to construct the curriculum system of Western Cooking.DACUM is recognized as a scientific,efficient and economical occupation analysis method,the research purpose of this paper is how to integrate DACUM with the professional construction of western cooking,and construct the teaching plan to meet the requirements of actual demand and teaching requires.The teaching plan which was obtained through research and analysis,structure construction,implementation,adjustment and reconstruction has been in the good operation of more than one year,and has a good effect on the development of Western Cooking,and it has had a leading role in the area cooking construction.This paper is divided into 5 chapters.Article basic structure is as follows: Chapter 1 is for introduction,which is devoted totheoretical research of domestic and international curriculum development and the research of cooking curriculum development by way of literature research;Chapter2 is focus on the general situation about Wenzhou Huaqiao Vocational School and its Western Cooking,and sets forth this representative cases and the Western Cooking background of curriculum construction;Chapter 3 is about how to plan and carry out the DACUM Job Analysis meeting,to apply the DACUM Job Analysis theory to organize and implement the DACUM Job Analysis meeting;Chapter 4 bears on construction and adjustment of the vocational western cooking courses,and constructs the curriculum system in the real conditions according to the analysis structure of the DACUM Job Analysis meeting;Chapter 5 is about the achievements and the significance of experience.For example,the achievements and experience of a whole year curriculum construction,and the situation of the vocational western cooking after accomplishing curriculum construction.
