Taken red globe grapes in Beijing Yanqing as the material,we studied on epiphytic microorganisms in different growth duration,the effect of fungicides and SO2 treatment on grapes cluster epiphytic microorganisms and fruit quality,isolated advantage pathogens during grape storage.We knew clearly epiphytic microbial structure and volume changes and confirmed optimum fungicide treatment in grape maturity and best SO2 treatment in storage,which provided theoretical basis for biological contamination regulation in the whole process of red globe grapes production,storage and sales.(1)Red globe grapes epiphytic microbial structure and volume changes were analyzed in clusters,leaves and branches during different growth stages.The number of epiphytic bacteria,the epiphytic filamentous fungi and yeast raised.In the late maturing,we should strengthen prevention for Botryis cinerea,Alternaria spp.and Penicillium sp.,to avoid causing serious biological contamination during storage.(2)Red globe grapes epiphytic microbial structure and volume changes,soluble solids content,titratable acid content and Vc content were measured.These indicators indicated that optimum fungicide treatment in grape maturity was spraying concentration of 875 mg/L of thiophanate-methyl.This approach could effectively inhibit mold growth and maintain soluble solids content and Vc content,preserving red globe grapes flavor.(3)Red globe grapes epiphytic microbial structure and volume changes,soluble solids content,titratable acid content,Vc content and SO2 residues were measured.These indicators indicated that best SO2 treatment in storage was that the first time fumigation 500?L/L×1.0h,each time interval of 15 days,300 ?L/L×0.5h fumigation processing.This treatment could effectively inhibit the growth of Botryis cinerea,Alternaria spp.,Penicillium sp.and Aspergillus niger,maintaining oluble solids content,titratable acid content and Vc content.And the SO2 residues did not exceed the FDA limits.(4)The pathogens were identified during storage.Advantage pathogens were Botryis cinerea,Alternaria spp.,Penicillium sp.and Aspergillus niger.No matter whether there is a wound,Botryis cinerea,Alternaria spp.and Penicillium sp.could infect tissue as low pathogenic.They should be focus on prevention during grape storage.In vitro and in vivo antibacterial antibacterial experiments shown that the best concentration of SO2 treatment was 500 ?L/L,which could effectively inhibit the growth of filamentous fungi and proliferation of lesion.
