The aim of study was to research the effects of glutamic acid residue on growth,blood biochemical indexes,meat performance,meat quality and breeding benefits of Qinchuan beef cattle.12 bulls of 18-month-age,12 cows of 18-month-age and 12 bullocks of 8-month-age were selected and randomly allocated to 4 groups with 3 cattle per group.The control group and groups ?,and were respectively used 0%,1.5%,3%,4.5% glutamic acid residue ? ?to replace part of soybean meal of diets.Feeding trial lasted for 100 days,including 10 days of adaptation and 90 days of data collection.The results showed as follows:(1)Effects on growth:(1)at the daily gain,group ? in bulls was significantly higher than that of control group(P<0.05),and group ?and ?in cows were significantly higher than that of group ?and control group(P<0.05),and group ?in bullocks was significantly higher than that of control group and group(? P<0.05).(2)At the dry matter intake,group ? and in bulls were significantly higher than that of control group(? P<0.05),and group ?,? and ? in cows were significantly higher than that of control group(P<0.05),and group ?and in bullocks were significantly higher than that of control group(? P<0.05).(3)At the feed utilization,group ?,and in bulls was significantly higher that of others(? ? P<0.05),group ?in cows was significantly higher that of others(P<0.05),and there were no significant difference in all groups of bullocks(P>0.05).In conclusion,it can improve feed intake,daily gain(bulls,cows,bullocks increased respectively by 28.04%,20.99% and 20.45%)and feed utilization(bulls,cows,bullocks increased respectively by 19.35%?9.66% and 5.19%)to use 3%glutamic acid residue replacing part of soybean meal in diets for Qinchuan beef cattle.And the addition of 3% glutamate acid residue significantly increased the body length and bust(P<0.05),had an increase in growth rate and improve the effect of fattening.(2)Effects on blood biochemical indexes:the contents of alkaline phosphatase of control group,group ?and ?in bulls were significantly higher than that of group ?(P<0.05);the content of alkaline phosphatase of group and in cows were significantly ? ?higher than that of group ?(P<0.05);and there were no significant effects of partial replacement of glutamic acid residue for soybean meal on blood biochemical indexes of bullocks(P>0.05).In conclusion,it was found that add appropriate glutamic acid residue in diet can't significantly affect liver function,energy metabolism,lipid metabolism and protein metabolism of the body.(3)Effects on meat performance : the meat-bone ratio of group ? in bulls was significantly higher than that of control group and group ?(P<0.05).The slaughter rate of group ?and ? in bullocks were significantly higher than that of control group and group ?(P<0.05),and the meat-bone ratio of control group and group ? in bullocks were significantly higher than that of group ?(P<0.05).There were no significant difference in all groups of cows(P>0.05).So the addition of glutamic acid residue can improve the slaughter rate and meat-bone ratio of Qinchuan beef cattle.The meat-bone ratio of bulls increased by 0.43,and the slaughter rate of bullocks increased by 3.6%.(4)Effects on meat quality:the redness of bulls ?and ?groups was significantly higher than that of the control group and group(? P<0.05).At the content of amino acid,the content of Phe of group ?and ?was significantly higher than that in control group and group in bulls(? P<0.05).The content of Arg in group was significantly higher than that ?in the other three groups in bulls(P<0.05).The content of Ala of group ?and ?was significantly higher than that in control group in bulls(P<0.05).The content of Glu of group ? and ? was significantly higher than that in control group in cows(P<0.05).The content of Glu and essential amino acid of group ?,and were significantly higher than those in ? ?the control group in bullocks(P<0.05).In the pH value,water loss rate,shear force,cooked meat rate,water holding capacity,water percentage,crude ash,crude fat,crude protein and fatty acids,there were no significant effect on each group of experiment to add glutamic acid residue(P>0.05).In conclusion,the addition of glutamate slag in the diet can improve the colour and flavor of beef.At the bull groups,the beef red was significantly improved,and the content of Phe,Arg and Ala increased respectively by 0.16%,0.12% and 0.16%.The content of Glu in the cow groups increased by 0.17%.And the content of Glu in the bullock groups increased by 0.14%.(5)Effects on breeding benefits:the gross profit of group ?,?and ?in bulls were significantly higher than that of control group(P<0.05),the gross profit of group and in ? ?cows were significantly higher than that of control group(P<0.05),the gross profit of group ? in bullocks was significantly higher than that of control group(P<0.05).Indicating that the addition of glutamate acid residue in the diet could improve the breeding efficiency of Qinchuan beef cattle,and bulls,cows and bullocks increased respectively by 116.91%,91.18% and 43.16%.So daily income of each cattle respectively increased by 4.77,3.41 and 3.63 yuan in bulls,cows and bullocks.In summary,the addition of glutamate acid residue in diet could promote the growth of beef cattle,could improve feed utilization and breeding benefits,and had no adverse effect on health,meat production and meat quality of beef cattle.And the optimal does was 3% levels.
