In this study,the production performance of AA broiler,Lianshui Chicken,SASSO Chicken were investigated during embryonic and growth period,and slaughter percentage of three varieties of chicken was determined.The meat color,meat tenderness and inosine monophosphate acid content of three varieties were determined.We researched the development of the inosine monophosphate acid metabolism key factor Adsl and meat tenderness related gene Capn3 during embryonic and growth period.The result of this study provided a theoretical basis and related parameters for subsequent test hybrids.The main results are as follows:Both in embryonic and growth period,AA broiler has best production performance,moreover the production performance of SASSO Chicken better than Lianshui Chicken,which explain differences in growth performance among varieties in the embryo would be performance;Growing meat ratio in the order of Lianshui Chicken,SASSO Chicken,AA broiler;The slaughter rate and eviscerated rate of three varieties were over 80%and 60%on market age,and eviscerated rate of Lianshui Chicken was significantly lower than SASSO Chicken and AA broiler(P<0.05),while there was no significant difference in terms of slaughter rate(P>0.05),furthermore Lianshui Chicken is the best in the aspect of wings rate and leg muscle rate(P<0.05).The chest and leg have the same tendency as the respect of meat tenderness,on market age,Lianshui Chicken and SASSO Chicken breast shear force was significantly higher than AA broiler(P<0.05),Lianshui Chicken leg muscle shear force was significantly higher than AA broiler(P<0.05),SASSO Chicken leg shear higher than AA broiler,but the difference was not significant(P>0.05),so that the meat tenderness of Lianshui Chicken is better than SASSO Chicken,and SASSO Chicken is better than AA broiler.As the aspect of meat color a*and L*of SASSO Chicken significantly higher than AA broiler(P<0.05),a*of Lianshui Chicken significantly higher than AA broiler(P<0.05),comprehensive comparison of SASSO Chicken better than Lianshui Chicken,and Lianshui Chicken is better than AA broiler.The content of IMP increases with the age at first increased and then decreasedAdsl and Capn3 have Developmental regularity in embryonic and growth period,and its mRNA expression amount decreases as age increases embryos in the embryonic,while in the growing season as days of age decreases;The expression of Adsl in the three varieties has similar trends,but the expression of a greater difference,as well as Capn3.The expression of Adsl was negatively correlated with IMP concentration,while the expression of Capn3 was correlated with meat tenderness.In conclusion,AA broiler has best performance compared with SASSO Chicken and Lianshui Chicken in terms of meat production;with the meat color,meat tenderness and inosine monophosphate concentration the SASSO Chicken and Lianshui Chicken better than AA broiler;In the three varieties the expression of Adsl has similar trends,but the expression of a greater difference,as well as Capn3.The expression of Adsl was negatively correlated with inosine monophosphate concentration,while the expression of Capn3 was correlated with meat tenderness.
