Food quality and safety is related to everyone's daily life, embodies the ruling ability of the country, food industry is also an important part of our country's economy. With the development of society, the food requirement type of our country transforms from quantitative to quality type, but problems of food quality and safety also emerge in endlessly. Strengthening food quality management and enhancing food quality become an urgent task. Food quality evaluation is an important part of the food quality management, aiming at some problems of food quality evaluation, this essay builds food quality evaluation system based on fuzzy mathematics.There are many types of food, food industry is also emerging new products, food quality supervision and evaluation is carried out according to categories, the article introduces the present China's food category system and its problems, sums up the factors that influence food quality and its characteristics. Food quality evaluation is implemented under specification and basis, the article analysis the relevant basis of food quality evaluation, such as the laws and regulations, food standards, quality certification and food inspection system, finds out some shortcomings. This essay summaries three types of the current food quality evaluation methods, including evaluation method of qualified and unqualified, different technique type evaluation method, comprehensive evaluation method. At present, China's food quality evaluation methods exist some problems that food quality evaluation methods are mostly evaluating qualified or not from the aspect of detection and analysis technique of single indicator, not conduct further analysis on qualified and unqualified degree, comprehensive evaluation is staying in the sensory indicator, lacking of a comprehensive evaluation system.For China's food quality evaluation aforementioned problems this essay designs an evaluation system which distinguishes qualified and unqualified products, including fuzzy comprehensive evaluation and safety risk index, taking degree and frequency into account. Evaluation system firstly evaluates the product whether it is qualified or not. Quality evaluation must establish on the basis of qualified food. Food that has obvious problem is not involved in the evaluation of food quality. So before evaluating food quality, this paper distinguishes the classification of object, do not give fuzzy comprehensive evaluation but food safety risk to some products which exist following situation, including not in the warranty period, illegal use of additives, excessive of microbiological, physical, chemical contamination, pesticide residues, veterinary drug residue and other indicators.The essay uses fuzzy comprehensive evaluation model for qualification evaluation, puts forward the selection principle of indicators, constructs index system of three layers with determined indicators weight whose level indicator are the basic quality, safety and health indicators, sensory indicators and other indicators. For unqualified product, relevant safety risk indexes are constructed. Indicators unqualified degree and hazard level of unqualified products are taken into account to construct safety risk index. Finally, the essay builds the overall evaluation index combining with frequency of the qualified and unqualified, average of fuzzy comprehensive evaluation and average of safety risk index.Finally this food quality evaluation system is applied to actual case analysis. As can be seen from the calculation results, related index can better reflect the level of food quality, evaluation system has good practical value. For other problems of food evaluation and supervision, the essay puts forward some suggestion that unifying food classification system, perfecting food standards, strengthening supervision the implementation of enterprise certificated, strengthening food information disclosure, strengthening public opinion guidance and education and other suggestion.
