Aviation food has many kinds of food processing,complex structure,long storage time and processing in the air characteristics,these characteristics based on aviation food determines that it is higher risk food,and more importantly airline food related to the flight safety of the plane.Therefore,study and discuss how to set up the aviation food security line,how to eliminate the problem of food insecurity incidents occurred in the air catering industry,is an important problem in the airline catering industry.This paper takes catering department of Xiamen Airlines Co.,Ltd.as an example,based on the method of "GB/T the 22000-2006 food safety management system-Requirements for any organization in the food chain",establishing the food safety management system in the aviation food production enterprises,implementing and planning the aviation food production enterprise security products.Through probing into the practical significance for OPRP,CCP in the process of actual application,drawing the OPRP/CCP decision tree,clearing how to determine CCP and OPRP in the process of building food safety management system.Considering the food safety management system based on the ISO 22000:2005 is a dynamic management system,which with the changing external environment,is likely to affect the original results of risk assessment,this article also discusses how to organize and carry out verification activities,how to realize the dynamic management.Verifying the effectiveness of ISO22000 Food Safety Management System through the on-site review,simulation test,experimental detection,audit evaluation and other methods,and on this basis,combined with implementation of the early warning and training,eventually realized the effectiveness maintenance of system operation process.Catering department of Xiamen Airlines has successfully implemented the ISO 22000 Food Safety Management System,achieving Ex ante control of food safety risk,effectively preventing the occurrence of food safety incident,guarantee the safety of aviation food.In this paper,the successful implementation experience of Xiamen Airlines ISO22000 system could be used for other airline catering enterprises to establish and implement the ISO 22000 Food Safety Management System.
