Food is,what kind of a nation choose food,why choose such a food,how to eat such food is not only a means of livelihood changing course,it is a process of cultural formation and development.Although there is no lack in academic circles "objects" as the starting point for ethnic culture research results,but the acid food as a starting point to study the culture of the Dong,Dong culture to explore the development path in the trend of globalization is still very little.Through data collected,field survey and other research methods,economic anthropology perspective on the relationship between food and culture of Dong Dong of acid between studies.Text is divided into five parts,the first part of the Dong collate and analyze the types of acid food,divided into meat sour food,vegetarian food acids,acid sour soup type food,its production method is relatively unique,depending on the use of food acid different containers for production,the flavor is different,purely manual brewing methods in today's society is extremely rare.The second part examined the reasons for the Dong acidophilic checking a large number of ancient books and materials,we found not only with the natural environment and Dong eosinophilic about their survival,their ethnic origin,livelihoods,and so on are inseparable from the religious ideas Relationship.The third part studies the Dong sour food to feed their families in their societies function,storage function,switching functions and sour food embodied cultural connotation of the Dong religion concept,religion,morality,collective and outlook.The fourth part studies the Dong mode of production,changing consumption patterns change after the Dong acidophilus practices.The fifth part is compared with kimchi,the Dong acid explore how to develop ways to promote food Dong culture protection and development.Final conclusion: humanity is at fast food,the rapid development of industrialization this background,the Dong sour food inherent in the culture will provide a new perspective of the development of modern society,the devdevelopment of dong culture and adapt to the path of the global economic integration.
