With the development of the Internet economy,O2 O mode has developed rapidly in different industry.Takeout as the combination of catering industry and Internet plus made it available for consumer to order a meal through the network and enjoy delicious food without going out,which caters to the needs of consumer.In recent years,take-out market increased at the rate of about 200%.There were many potential dangers of take-out quality exposed on March 15 th,the World Consumer Rights Day this year,such as platform merchants without a licence,black workshop,kitchen store etc which showed a series of problems of quality and safety monitoring.In catering O2 O mode,consumer is in a state of information-non-reciprocity,so it is hard for consumer to monitor the quality of takeout.It is important to concern about the quality of takeout and the key to guarantee the take-out quality is to find out factors having an influence on it.Then pay more attention to affecting factors and take measures to reduce potential dangers in the process of food supply chain and prevent the food safety problems in advance.The research has done as follows according to improving the take-out quality level.At first,the factors influencing catering takeout O2 O mode of quality have been summarized based on the news about takeout quality and the paper at home and aboard to construct impact factors system.The theory of fuzzy comprehensive evaluation method and system dynamics are applied to evaluate the influence factors and to find the key factor with the questionnaire survey and expert consulting data.Finally,the paper makes use of system dynamics based on the previous analysis of the factors and operation data of a chain restaurant to simulate the model.The effective measures to improve the quality of takeout are put forward according to the simulation results.
