As a pillar industry in Yangbi,Yangbi walnut has been strongly supported and rapidly developed by the government in recent years,and many problems have been exposed.The main problems are the low quality of Yangbi walnut,low degree of market share,the lack of competitiveness and the low degree of industrialization and modernization.Walnut baking is a very important part in the production of walnut,the standardization of walnut baking determines the baking quality of the walnut,and the quality of baked products directly determines the commercial quality of walnut,and the improvement of the quality of the goods can help improve the economic benefit of the producer.This paper compares and analyzes the status quo of walnut baking standardization research in Yangbi,the present situation of Yangbi walnut baking process.It is found that there are currently only walnut production technical specifications and geographical indication product standards,and there is no effective technical standard for walnut baking and the comprehensive standard of walnut industry.Based on walnut standardization baking experiment,the factors affecting walnut commodity quality were explored,and the advantages and disadvantages of standardized curing barn and traditional baking were compared and analyzed.Standardization has the following advantages:?Standardized baking compared with the traditional ways can shorten 30% of the heap of retting time;?Make sure that the walnut at the 28 °C heap of retting and 45 °C fixing color conditions are easy to obtain better shell color;? High-quality walnut kernels can be easier obtained by baking at low temperature(38°C)after high temperature fixing color;?To standardized operation of harvesting,sorting,baking time and baking temperature can effectively control the quality of walnut baking products and improve the baking efficiency of walnuts;?It reduces the labor input of walnut baking,which does not significantly increase the cost of use compared to traditional baking.According to the standardized research,it is found that there are some problems in Yangbi walnut baking,such as old and not comprehensive standards,lack of standardization awareness,lack of standardized supervision,and lack of professional and technical personnel.By sorting out and analyzing the favorable conditions for promoting the standardized baking of walnut,the existing problems in the use of standardized baking room,the comprehensive work has put forward suggestions on the standardization of the promotion and implementation,which provides a reference for the establishment of standardization system of walnut industry by standardizing baking.In this way,the standardization research has given some suggestions for the promotion and implementation of standardized baking in Yangbi:?To continue to improve the manufacturing process and moisture removal design of standardized baking room;?To establish an effective standard for walnut baking as soon as possible;?To strengthen standardization research,strengthen standardized knowledge publicity,and enhance the standardization consciousness of technicians and farmers;?To continue to build standard baking demonstration sites in the households of farmers to directly demonstrate the advantages of standardization;? To strengthen the standardized management,supervision and quality certification mechanisms,standardize the existing trading market and gradually establish a large-scale,regional walnut trading market.To sum up,establishing an effective walnut baking standard and the walnut industry comprehensive standard system is an important means to improve the economic benefits of the walnut industry,brand competitiveness and industrialization.The purpose of this paper is to show that it is feasible and necessary to promote and develop standardized barn roasting standard in Yangbi and to establish Yangbi walnut baking standard.At the same time,it points out the problems existing in the standardization of walnut baking and puts forward some corresponding suggestions to provide reference for promoting the standardization of Yangbi walnut baking and promoting the economic benefit of Yangbi kernel peach industry.
