Oats are Avena L.,an annual herbaceous plant,which can be divided into two categories,skin oats and naked oats,depending on whether the seeds are shelled or not.Dextran is a type of polysaccharide based on glucose,?-(1?3)(1?4)glucan,abbreviated ?-glucan,is a water-soluble dietary fiber,mainly found in oats.In cereals such as barley and oats,the high content of oat bran is an important functional ingredient in oats.In this study,?-glucan content of 112 oat varieties(strains)and 32 oat products was tested using the Megazyme Hybrid ?-Glucan Detection Kit.The results and analysis are as follows:1.The same grinding process was performed on bare oat grain,and most of the polished grain was increased in ?-glucan content.It is possible to remove the part containing no or less ?-glucan during the grinding process,but due to the difference The variety of grain hardness,water content and other reasons,under the same treatment of individual varieties of serious damage,resulting in the loss of ?-glucan,resulting in reduced ?-glucan content after grinding;2.The content of ?-glucan in different oat products is also different.Due to the different processing methods of different manufacturers,some oat products will have higher ?-glucan content after processing,and some oat products will make ? after processing.-Reduced dextran content;3.The content of ?-glucan in oat flour of different manufacturers is different,but obviously the ?-glucan content of flour is generally low;4 The ?-glucan content of oat bran of different manufacturers was different,but obviously higher than other oat products and naked oat varieties/strains.
