With excellent color,smell and taste,soy sauce plays a very important role as a seasoning in people's daily life.The fermentation process of soy sauce is the most crucial link in the brewing process,which will directly affect the flavor and quality of the final product.Since the temperature adaptation range of microorganisms in fermented soy sauce is different in different stages of fermentation,controlling the temperature of each reaction stage is beneficial to the thorough fermentation reaction of soy sauce to guarantee the quality and quality of soy sauce produced.Retaining the advantages of traditional brewing technology,this paper designed a soy sauce fermentation intelligent monitoring system based on Internet of Things.The design will regulate the temperature parameters of different reaction stages in the fermentation process of soy sauce,so as to ensure the flavor and quality stability of soy sauce products.According to the overall design requirements of the system,we designed the hardware circuit of the soy sauce fermentation temperature acquisition node and the environment parameter collection node of the fermentation workshop.And for the actual production demand in the fermentation process of soy sauce,the fermentation temperature collection node is repackaged so that it can accurately collect the temperature information in the soy sauce fermenter,and at the same time it can ensure the food safety of the fermentation product;Using ZigBee technology we constructed the star-type wireless transmission network,analyzed the technical characteristics and networking methods,and further elaborated the star network topology;the ARM9-based gateway was designed via the ZigBee wireless sensor network and gateway,and its working circuit,main control chip,and Ethernet module were analyzed;the data acquisition node uploaded the collected information to the server,according to the relevant environmental parameter information,the server sent corresponding control instructions to Control the control node,to ensure that the fermentation process of soy sauce is in the best environment.The test results show that the function of the system reached the expected design effect,well protected the soy sauce product stabilities of flavor and quality,while liberating the labor force of the workers.Overall,it has a certain practical and worth to apply widely.
