Both Boletus edulis and Morchella vulgaris are classic dual-use fungi.According to the literature,Boletus has positive effects on antioxidant activity in the body,while Morel is confirmed to be the cause.Alcohol-induced acute gastric mucosal damage has a protective effect.In this paper,we tried to study the liver protection activity of boletus and morel extracts,and prepared them into boletus and morel oral liquid.The main research work is as follows:First,according to the work of the previous work of the laboratory,the composite water extract was prepared by mixing the boletus and the morel powder in a ratio of2:1.In the experiment,the polysaccharide in the composite water extract was used as the detection index,and the optimal process results of the composite water extract of bovine liver and morel were finally determined: the temperature was 80 °C,and the hot water bath time was 2 hours.The ratio of material to liquid is 1:20mg.mL-1 was extracted twice,and the polysaccharide extraction rate of boletus and morel extract water extract was the highest.Then,further analysis of the boletus and the morel extract water extract was carried out,and the results showed that the extract also contained various biologically effective active ingredients such as reducing sugar,protein,amino acid,organic acid,fatty acid and mannitol.On this basis,this paper initially explored the protective effect of boletus and morel extracts on ALD.By ingesting a large amount of alcohol in mice to establish a model of ALD,using silybin as a positive control,boletus and morel extracts can significantly reduce ALT caused by excessive alcohol intake.And the increase in AST indicators.Subsequently,the level of oxidative stress was tested and it was found that the composite water extract can increase the activity of antioxidant enzymes SOD and GSH-PX caused by excessive alcohol intake.In addition,MDA is one of theimportant products of lipid peroxidation,and the level of TG is also an important basis for measuring liver function.It has also been found through experiments that complex water extracts can indeed reduce the increase in alcohol due to excessive alcohol intake.From the results,the combined water extract of boletus and morel can not only improve the body's antioxidant function,but also improve the damage of liver cells.Finally,the preparation of the composite water extract oral solution was studied.The optimal preparation process was determined as follows: 10% chitosan was used as a clarifying agent,and a stirring speed of 650 r/min,0.4 g/kg potassium sorbate,and a concentration of 3% hydroxypropyl-? was set at 60 °C.-Cyclodextrin.At this time,the appearance of the oral liquid is the best.According to the taste evaluation,it was confirmed that the taste of 0.063 g of citric acid when 5% of xylitol was added and the case of adding 0.077 g of citric acid in the case of 5% of granulated sugar were considered to be more palatable.In addition,the stability of oral liquid was investigated.According to the results of illumination experiment,room temperature experiment and accelerated experiment,it is considered that the composite water extract oral solution is suitable for storage under the condition of avoiding illumination at room temperature or low temperature.This paper believes that the combined water extract of Boletus and Morchella can reduce the content of oxidative factors,increase the antioxidant effect and inhibit the lipid peroxidation caused by alcohol,and play a hepatoprotective effect.This result will also lay the foundation for the subsequent work on the evaluation of the active function of Boletus and Morel.
