In recent years,with the prosperity of the catering industry,catering gas exhaust and kitchen fume pollution is becoming increasingly serious.Kitchen fume emission has joined motor vehicle emissions and heating emission being the major sources of haze pollution.Controlling the emission of kitchen fume is of great significance to the protection of atmospheric environment.Therefore,it has great social value to develop a kitchen fume emission purification equipment and related systems which has more efficient filtration capacity on the basis of meeting the emission standard.The purpose of this paper is to design a high efficiency centrifugal exhaust and deoiling device in commercial kitchen.We will prove the filter its innovative and high efficiency by contrast.This paper firstly introduces the ideas and design processes of several key innovation points of the device including the filter body which combined with motor and fan,utilization and determination of processing parameters of foamed metal,wet spray equipment,exhaust hood and oil baffle and the final overall design.Secondly,the construction and construction of the laboratory are introduced,the function and significance of related equipment in laboratory are briefly described,and the testing instruments necessary for the experiment are enumerated by this paper.After defining the experimental conditions,designed the device optimization experiment and the filtration efficiency comparison experiment.Analyze the effect on filtration efficiency from methods of the device`s air outlet,the opening and closing of wet spray equipment,the speed of the filter and the Cooking methods.The amount kitchen fume in different cooking methods was tested.The error analysis is completed.While comparing the data,the device is optimized to make it more efficient.Finally,comparing the optimized device with the general device,proved that the optimized device`s filter efficiency is much higher.
