With the rapid development of the global aquaculture industry,the annual production of tilapia is gradually increasing.Tilapia is the third largest cultured species in the world and the most marketable aquatic product.However,tilapia produces a large amount of waste during processing,and fish rafts are one of the most important wastes.However,tilapia platoons are difficult to develop and utilize due to their high fish bone content and hard texture.The tilapia platoon has polluted the environment and has become an urgent problem for all aquatic product processing enterprises.At present,most of the antioxidants on the market are synthetic and there are great safety problems.Therefore,this article uses acanthopanax senticosus tea extract as a natural antioxidant to reduce food safety problems.In this study,the fresh tilapia squid was used as raw material,and the fresh tilapia platoon was subjected to acetic acid soaking and softening treatment,deacidification treatment,pickling,drying and baking treatment,followed by ultrasonic assisted extraction with acanthopanax senticosus as the basic raw material.The anti-oxidative activity and antibacterial activity of the extract of Acanthopanax senticosus leaves were studied.The extracts from Acanthopanax senticosus leaves were evenly spread on the surface of roasted tilapia steak.The actual preservation effect of the extract of Acanthopanax senticosus tea on the roasting tilapia during storage.Now I have the following conclusions:(1)This study determined the nutrient composition of tilapia platoon.The results showed that the moisture content of schnitzel was 75.4%,the fish bone content was 69.8%,the ash content in fish bone was 12.84%,and the fish fillet was 1.27%.The content of the fish is 10 times that of the fish;the total nitrogen content in the fish bone is 1.76%,the fish fillet is 3.08%,the total nitrogen content of the fish bone is 57.1%,and the fish bone calcium content is 4.75%.It is 0.013%,the calcium content of fish bone is about 400 times higher than that of fish fillet,the phosphorus content of fish bone is 2.27%,the meat of fish is 0.16%,the phosphorus content of fish bone is about 13 times higher than that of fish fillet,and the ratio of calcium to phosphorus of fish is 0.081.The ratio of calcium to phosphorus in fish bones is 2.09.(2)Tilapia fish fillet softening treatment process.The response surface method was used to optimize the tilapia immersion softening treatment process.The results showed that when the acetic acid concentration was 15.6%,the soaking time was 156 min,and the ratio of material to liquid was 1:5 g/mL,three parallel experiments were conducted under this condition.The tilapia platoon softness was obtained(84.42% ± 0.24%,n = 3);the tilapia squid was dried by natural air drying,45 °C hot air drying and 55 °C hot air drying.The results showed that the 45 °C hot air drying It is the best way to dry tilapia.(3)Ultrasound-assisted extraction of active constituents from Acanthopanax senticosus leaves,mainly flavonoids,was studied for the antioxidant activity and bacteriostatic action of the extract of Acanthopanax senticosus leaves.The results showed that the extract of Acanthopanax senticosus leaves on DPPH The free radical IC50 is 0.359 mg/mL,the IC50 for superoxide anion is 0.281 mg/mL,the IC50 for hydroxyl radical is 1.22 mg/mL,and the IC50 for ABTS+ is 0.332 mg/mL,which has strong antioxidant capacity and reducing power;Acanthopanax senticosus extract has certain inhibitory effect on Staphylococcus aureus,Bacillus licheniformis and Escherichia coli,and the inhibitory concentration(MIC value)is Staphylococcus aureus 32 mg/mL and Bacillus subtilis 32 mg/ mL,E.coli 16 mg/mL.(4)This study investigated the water content,pH value,total number of colonies,TBA value and hydrogen peroxide value of roasted tilapia platoon with five different concentrations of acanthopanax senticosus tea extracts at 0,0.5,1,2,4g/100 mL.The results showed that the extract of Acanthopanax senticosus tea could effectively prevent the loss of water in tilapia platoon,delay the oxidation of lipids in tilapia platoon,inhibit the growth of spoilage microorganisms,and effectively prevent tilapia from being stored during storage.The production of oxides is also consistent with the antioxidant test results of Acanthopanax senticosus tea extract.
