Eucommia is a famous traditional Chinese medicine in our country,it has been listed in the new resource food consultation catalogue.It contains the chlorogenic acid and Eugenol diglycoside and other effective ingredients.It has many beneficial effects,such as lowering blood pressure,improving renal function and resisting fatigue.the formulation process and the clarification as well as the sterilization process conditions of the beverage were optimized,the stability of the beverage at normal temperature has been researched.The main research results are as follows.1.Through comparing two methods,with the content of chlorogenic acid as indexes,we finally selected warter extraction.The optimum conditions:extraction temperature 85?,extraction time 50min,liquid-solid ratio 35:1,extraction times 2.2.The optimum conditions:the Eucommia leaves 0.28%,sucrose 6.89%,citric acid 0.03%,stevioside 0.0052 ‰,jujube 1.56%.3.The optimum conditions:chitosan concentration 0.7(g/L),temperature 53?,time 50 min,3000 r/min centrifugation 15min.4.In order to ensure the stability and reliability of the process,we final selected the condition:temperature 85?,sterilization 20 min.5.The flavors of beverage were determined by GC/MS,27 kinds of volatile flavor substances were detected,including 5 kinds of alcohol compounds,16 kinds of carbonyl compounds,1 kinds of acid compounds,2 heterocyclic compounds and 3 kinds of ester compounds.6.The stability of compound beverage was studied during storage period.The concentration of chlorogenic acid,pH value,sensory score,light transmittance,?E and microbial index of beverage were observed at room temperature for 6 months.The results show that the microbiological index meets the hygienic standard and the sensory quality is good.7.Industrialization demonstration:equipment selection,process flow chart drawing and plant graphic design drawing.
