In order to explore the effect of drinking compound phosphate water before slaughter for the remission of stress in Yanbian cattle,also lay a certain theoretical reference for the development of Yanbian cattle pre-slaughter management technology,36 Yanbian cattle(bull)were selected and divided into 4 groups randomly,which were treated with pre-slaughter fasting and drinking water within 24h before slaughter.The control group drinking tap water and the treated group drinking the compound phosphate water with the concentrations of 0.5%,1.0%and 1.5%.Stop water supply at 3h before slaughter,and the fresh blood of the jugular vein from Yanbian cattle was collected to the follow-up determination of blood-related indicators during the stop of water supply.The longissimus dorsi muscle quality of the left half of the carcass was measured at 45min and 24h after slaughter,and the right longissimus dorsi muscle was vacuum-packed after acid mature to the follow-up determination of beef quality during early storage.The COR and ACTH hormone contents in the blood,the blood routine indexes and blood biochemical indexes were measured in this study.The COR content in the blood of control group was significantly higher than that of compound phosphate treated group(P<0.05),while there was no significant difference in the level of ACTH hormone(P>0.05).There were significant effects on the number of WBC,RBC,LYM,NEUT,HGB content and HCT in the blood of Yanbian cattle treated with compound phosphate(P<0.05),while there was no significant effect on the PLT number(P>0.05).There were significant effects on the content of GLU,ALT and CK in the blood of Yanbian cattle treated with compound phosphate(P<0.05),while there was no significant difference on the LDH content between two groups(P>0.05).There was no significant difference in the contents of Ca and P in the blood of Yanbian cattle between control group and compound phosphate treated group(P>0.05).In conclusion,drinking compound phosphate water before slaughter could alleviate Yanbian cattle pre-slaughter stress to a certain extent,and maintain the steady state of the body environment.In addition,the concentration of compound phosphate water was appropriate,which did not lead to imbalance of calcium and phosphorus in blood of Yanbian cattle.The pH value,temperature and surface color of the longissimus dorsi muscle from the left half of carcass at the 45min and 24h during post-slaughter,and the pH value,surface color,water retention,shake force and muscle fiber structure during the early storage were determined respectively.Compared with control group,the pH and CIE a*value of Yanbian beef were significantly increased treated with compound phosphate(P<0.05)and the CIE L*value was significantly decreased(P<0.05),while there was no effect on CIE b*value(P>0.05).There was significantly effect on the T45min and T24h value of the carcass of Yanbian cattle treated with compound phosphate(P<0.05).During the early storage,the treated group had the significantly difference in the drip loss,shake force,muscle fiber structure(area,perimeter,minimum diameter)compared with control group(P<0.05),while there was no significantly difference in the cooking loss between two groups(P>0.05).In conclusion,drinking compound phosphate water before slaughter could increase the pH value and water retention of Yanbian beef,improve the color and tenderness,and promote the quality of Yanbian beef to a certain extent.Comprehensive analysis of the experimental results,the group treated with 1.0%concentration of compound phosphate had the best effect.
