With the rapid development of our national economy and the improvement of the comprehensive national strength,the standard of people's living has been greatly improved,now people are increasing focusing on balanced nutrition of the diet,but the meat in the people's diet is the most important classification of food sources to the modern people.Because of the traditions and beliefs in our country,pork accounts for as high as60%of the meat which people consume,pork is a good source of protein,fat,vitamins and minerals,which are necessary to our body.The pork protein is a kind of high-quality protein,its content and proportion of eight kinds of essential amino acids is colse to the need of body;the meat is a good source of B vitamins especially vitamin B1and B2;in addition,pork is rich in iron,which is necessary to generate and maintain function of the red blood cells in human blood.According to statistics,the annual production and consumption of pork in China are more than 50 million tons,accounting for nearly half of the total global production and consumption,China is a well-deserved big country about the production and consumption of pork.However,in recent years,our purchasing power of pork has declined,the research show that,Consumers'willingness to purchase food is mostly affected by the safety properties besides other factors such as income,commodity price,age,educational level,family structure,purchasing location and so on.The more frequently the food safety incidents happen,the higher risk perception of consumers,the stronger awareness of consumers'avoidance.Take a broad view of recent years,the pork safety incidents in China often occur despite repeated prohibitions,such as Shuanghui"clenobuterol hydrochloride"event,"affusion pork","poison ham","illegal cooking oil",the event of large dead pigs floated in the Huangpu River,diseases caused by eating cysticercosis-infected pork,and so on.Emerge in endlessly in the food safety events lead to consumer's trust in the pork products decreased,even the pork is certificated as"green food",the purchasing intention of consumers becomes weaker as well.The severe situation of pork safety indicates that it is very necessary and urgent to strengthen the supervision of pork safety.From the production to the sales of commercial pigs,the process involves all aspects of the market entity,it is necessary not only to tighten up the management and supervision of the process,but also to strengthen the regulation and supervision of pig slaughtering and meat sales,as the last line of defense pork safety,slaughtering quarantine,is the most important security of pork safety.In this essay I will explain how to ensure pork safety in the key link of the slaughtering quarantine combining my working experience in this area for years,and make some innovations on this basis.first,the paper introduces the slaughter quarantine measures and analyzes the harm of each key inspection points,which corresponding projects to detect,as well as how to as early as possible control the harm in each key inspection points;second,distinguish the pathological changes of the slaughterhouse stress syndrome from the pathological changes caused by the etiology during the summary of some of the pathological changes and the symptoms of the disease.We analyse the slaughter industry in China has the characteristics of"point dispersion,low concentration,low production capacity,backward equipment,health and quarantine facilities are not in compliance with mandatory standards,weak supervision"and so on,and draw lessons from the advanced experience of developed countries,I put forward some suggestions:From the point of view of citizens,how to choose and buy“quality-assured meat”.From the perspective of law-enforcement personnel,improve their ability of quarantine to strengthen the team construction,strengthen the regulatory cooperation and coordination.From the aspect of laws and regulations,improve and perfect the system of relevant laws and regulations.From the perspective of supervision,control the use of“Clenbuterol”and other illegal drugs from the source,strengthen the application of tracking and traceability system,the establishment of large-scale pig supply base and information management system.From the perspective of quarantine link,improvement and scientific use of facilities in the quarantine link,strengthen the management of posts on quarantine process.From the technical level,mark the quarantine identification on the pig skin using laser carving seal technology,establish pathogen detection platform,establish the animal health supervision remote monitoring system,introduce the technology of detecting Trichinella spiralis by immunogold,etc.
