Morehella esculenta?L.?Pers is the Fungus of Morchellaceae.It's a kind of precious medicinal mushroom and edible fungus,which has high medicinal and nutritional value.It also used for food retention,qi stagnation,immunoregulation and hypolipidemic.In order to do further study of them and to exploit the resourcesin a rational way.Morehella esculenta?L.?Pers has been chosen as the research objects,the main contents of this paper shown below:1.The summary of the development and research status of Morchella,including the development of history,species and distribution,biological characteristics,chemical composition and biological activity.2.To use the natural medicine separation technology,we seprated 8 compounds from fruiting body,respectively:?-sitosterol,palmitic acid,uracil,1-Phenylimidazole,mannitol,2,3-dihydro-1H-imidazole-1-carbaldehyde,ergosterol,adenosine.In addition,It is the first time to obtaine from Morehella esculenta?L.?Pers what is?-sitosterol,1-Phenylimidazole,mannitol,2,3-dihydro-1H-imidazole-1-carbaldehyde,adenosine.3.To use supercritical carbon dioxide extraction method extracted the fat-soluble component,and analyzed the chemical components by GC-MS.There were 21compounds comprising for 69.92%were identified,including alkanes,enol,aldehydes,esters,fatty acids and so on.4.The content of 19 kinds of metal elements were tested by ICP-OES method;The content of 17 kinds of amino acids were tested by HPLC derivatization technique of Morehella esculenta?L.?Pers.5.The Extraction and purification technology of polysaccharide were extracted for Morehella esculenta?L.?Pers,and purified three polysaccharide compounds respectively:MEWP-H2O-?a?MEWP-H2O-?b and MEWP-H2O-?c,the molecular weight is 91.68 kD,33.93 kD and 9.99 kD,the determination of monosaccharide composition,infrared scanning,scanning electron microscopy were studied.In addition,the sugar content,protein content and uronic acid content were determined of polysaccharide components.
