With the continuous improvement of China's economic strength and the acceleration of the internationalization of higher education, the number of international students in China is increasing. When international students come to China, there will be a certain culture shock in all aspects of China, including diet, climate, transportation, interpersonal communication, etc.,in different environments with different living habits and different cultural backgrounds. As one aspect of environmental adaptation in cross-cultural adaptation, diet adaptation is related to their basic life, which is an urgent cross-cultural adaptation problem that international students have to face after coming to China.Based on the Chinese cultural tradition,Chinese diet accommodates to local circumstances including products, resources, climate, etc. It has gradually evolved into a Chinese diet culture system with rich and diverse dishes, exquisite cooking methods, and polite eating habits. When international students come to China, not only should they adapt to the cuisines, but also adapt to the diet habits. At the same time, they can also learn about Chinese culture through the diet. The research on the diet adaptation of international students can enrich the research perspectives and results of intercultural fields. What's more,it deeply explores and analyzes the problems and causes of international students' diet adaptation,so as to provide reference for the cultivation and improvement of international students' intercultural adaptability.Based on the methodology of positivism, this paper uses questionnaire survey method to investigate and analyze the diet adaptation of international students in Guangdong from three aspects of cognition, identification and practice, and pays attention to the impact and difference of various factors(identity, age, gender, region, time in China, religion, language use)on the diet adaptation. After that, the paper also explores the difficulty level of diet adaptation in cross-cultural adaptation. Finally, through the analysis of diet adaptation,we can analyze and interpret the internal driving force and external selectivity of foreign students in their intercultural cultural adaptation. It is found that there are different performances in cognition, identity and practice in diet adaptation of international students.International students adapt best in practice, and the cognitive aspect is in preliminary understanding. The identity aspect is more inclined to be neutral and conservative. From the perspective of different regions, the adaptation of the United States and Eastern Europe is the best, followed by Vietnam, the Middle East and Thailand have the worst adaptation. The length of staying in China, religion and language use are the main factors that affect the diet adaptation of international students.Diet adaptation is a relatively easy aspect with medium difficulty for international students in cross-cultural adaptation, which is the result of the internal driving force of diet as a living element and the external selectivity of Chinese cuisines. Therefore, the urgency of adapting to a certain aspect and the various resources provided by the host country affect the cognition, behavior and cultural identity of international students,so as to promote their cross-cultural adaptation.
