New retail,as the fourth revolution of retail industry,triggered the whole-process reengineering of the whole industrial chain including circulation channel,price,production process,supply and demand relationship,logistics supply chain and business model for realizing better shopping experience for consumers;and the Nation and consumers demands for food safety continue to improve.Baking retail enterprises need to constantly optimize and improve their internal processes.They should not only quickly respond to customers' personalized needs,but also maintain unified production standards and stable production costs,so as to achieve full traceability of production.In this study,SAP ERP was taken as the implementation platform,and bakery retailer A as the analysis object for the study of its internal workflow;a systematic analysis of the problems in the internal workflow of the bakery retail enterprise was conducted;and the most representative processes from the problematic workflow were selected according to origins of the situation,based on which they would be redesigned,optimized,and implemented.The most common optimization solutions for each problem were then explored to achieve the ultimate purpose of internal process optimization.To re-elaborate the above description,the research topic was derived from the actual application demands of a real enterprise,i.e.,bakery retailer A,and the research process was mainly focused on the analysis and optimization of the actual workflow difficulties and the detrimental factors of bakery retailer A.The optimized process was then embedded in the SAP ERP system,and the optimized internal processes were consolidated through the information system to solve the actual problems and create practical values for the enterprise.It could be concluded that the implementation has had great effects.The research results were applied internally at bakery retailer A.Through the evaluation of the implementation effects of the representative processes,both before and after the optimizations,it was found that the new processes could achieve the intended design purpose,and has effectively improved the management level and accuracy of the enterprise.In addition to the above,the resource allocation within enterprise A has also been significantly optimized;the maximum sharing of internal information resources of the enterprise has been achieved;the response rate to the market has been significantly improved;the operating costs have also been reduced,which are conducive to improving customer satisfaction.Under the increasingly fierce competition among retailers,this study can be helpful for short-shelf-life industries with some customization requirements,such as the bakeries,to acquire and respond to customer needs more quickly,to reduce operating costs,and to improve their efficiency,thus achieving the goal of improving enterprise market competitiveness.This study also provides a reference for other short-shelf-life retail chains to carry out its workflow optimization.
