Objective :Bitter orange,Citrus aurantium L.var.amara(CAVA),is an important crop and its flowers and fruits are widely used in China as a food spice,as well as in traditional Chinese medicine,due to its health-promoting properties.In previous studies,a total of 42 compounds have been reported in CAVA,and mass spectrometry analysis has found that the number of various compounds in CAVA is far from that,and there are still a large number of compounds to be excavated.Ways: In this study,HPLC-Q-TOF-MS technology and headspace solid phase microextraction combined with gas chromatography were used to comprehensively excavate the compounds from CAVA.This study firstly studied the cracking laws of four compounds in CAVA by mass spectrometry and an efficient method for the CAVA of flavonoids mining was developed,which consists of three methods: non-targeting,accurate-targeting and extensive-targeting.Then,headspace solid-phase microextraction combined with gas chromatography was used to analyze and identify volatile components in five parts of CAVA in this paper.Results: A total of 295 compounds were excavated through LC-MS,among which89 compounds were identified at different sites in the generation,and69 compounds were first reported in CAVA.GC-MS was searched by NIST.17 mass spectrometry database,and compounds with a similarity of over 90% were selected to identify a total of 122 aroma components.Among them,there are 8 kinds of aldehydes,26 kinds of alkenes,10 kinds of ketones,46 kinds of alcohols,3 kinds of alkanes,11 kinds of esters,6 kinds of acids,2 kinds of naphthalene,3 kinds of benzene rings and 7 kinds of other classes.Among them,alkenes and alcohols are the main aroma components in CAVA.Conclusion:Combined with HPLC-Q-TOF-MS and GC-MS,the excavation and identification of compounds in various parts of CAVA lay afoundation for CAVA to be used as food,medicine and nutritional drugs.
