Change And Integration: Hotpot In Hotan Uyghur Society

Communication and integration between different cultures is one of the basic features of human social interaction.Diet is the guarantee of human survival and the prerequisite of social development.Food culture is an important part of the cultural system,with food cultural activities as a starting point,reflecting the accommodation between different cultural regions,reflecting social development,the most appropriate and real.Hot pot is one of the traditional foods with a long history in China.With the in-depth development of economic globalization,it has spread all over the country and even the world,and become a popular food for consumers everywhere.In recent years,driven by the market economy and with the commercialization of food culture,hotpot has entered Xinjiang and been active in the uygur catering industry,becoming a highlight of the blending of "traditional" and "moden".With the rapid development of catering industry in recent years,hot pot has spread to southern Xinjiang,which accounts for more than 70%of the total uygur population,and entered the daily life of uygur people in Hotan.Hotan,located at the southermmost tip of Xinjiang,is an oasis town on the ancient Silk-Road.In the Iong history,the interaction and integration of various cultures were the norm.In the modem society of Hotan city,the two ethnic groups of Uygur and Han have always been in a living environment of cultural interaction and integration,with frequent exchanges,mutual influence and mutual acceptance.Based on the ethnological investigation of hotpot appearing in hotpot in Hotan in recent years,this paper describes the process of hotpot as an exotic food entering hotpot into Hotan,an oasis city on the southern margin of tarim basin.The author believes that the attitude and behavior of hotpot in hotpot community in hotpot city have experienced the process of"accept-sublation,remoulding and enriching",which reflects the collision,intersection,interaction and blending of the two food cultures.At the same time,hot pot cuisine,as a material and cultural symbol,expresses people,s perception and interpersonal relationship,promotes the communication between the two nations and drives the differences and boundaries between the two nations to become fuzzy.The communication and exchange between two different cultures living together for a long time under the same background,mutual learning,mutual absorption,mutual learning,can promote the integration of different ethnic cultures,conducive to the harmonious development of ethnic relations.This paper is mainly composed of six parts.The first part is the introduction,which mainly introduces the reasons and significance of the topic selection,sorts out and summarizes relevant works and various literatures at home and abroad,explains the research methods,introduces the field points,and explains the concept of culture,food culture and cultural integration.The second part is the first chapter,which summarizes the characteristics of Hotan Uyghur's traditional food culture from the categories of Hotan Uyghur traditional food and common food materials,cooking methods and eating methods of traditional food.The third part is the second chapter,which describes the development and evolution of hotpot in Hotan,and analyzes and summarizes hotpot's appearance in Hotan,which is an interaction between Hotan traditional food culture and foreign food culture.The fourth part is the third chapter,which shows and analyzes the acceptance process of hotpot by local uyghurs and confirms that hotpot is integrated into the daily diet of hotpot and uyghur people in hotan,which causes the change of traditional food culture,but it does not replace it,but enriches its own food culture.The fifth part is the fourth chapter,which shows the uygur operators' acceptance and transformation of hotpot,and uygur diners' attitudes and views on hotpot.It analyzes and proves that hotpot is a combination of hotpot and hotpot as a foreign food,which is essentially a blend of foreign culture and local culture.The sixth part is the conclusion of this paper.Hotpot,as a symbol of the fusion of contemporary food culture in Hotan,presents the interaction and fusion of various cultures.Through this kind of cultural phenomenon,the integration of different ethnic cultures can promote the integration of ethnic groups and the harmonious development of ethnic relations.
