| The catering industry is closely related to residents’ daily life and urban economic development.In recent years,with the advent of the era of Web 2.0 and the rise of catering tourism,more and more research on catering industry has been done,but the related research is often limited to a single spatial dimension.Because of its special geographical location and complex historical conditions,Dalian’s diet is very distinctive and diverse.Based on the two dimensions of time and space,this paper studies the spatial and temporal changes of the catering industry in Dalian,and uses the theory of spatial production to analyze its formation mechanism.From the perspective of historical changes,this paper explores the changes of catering industry in five historical periods of Dalian since its establishment,namely,the Russian occupation period,the Japanese occupation period,the tortuous development period,the formation stage of marketization and the stage of free competition,and summarizes the historical background,culinary characteristics,famous restaurants,influencing factors and spatial distribution.Based on the data of the public comment network,the spatial layout of the catering enterprises in Dalian in 2018 is sorted out from three aspects: the overall,the type of operation and the level of consumption.Then,from the economic,political,demographic,cultural,natural and other factors to analyze the impact of various factors on the spatial and temporal changes of the catering industry in Dalian.Using the theory of "spatial production" and taking time as the axis,this paper analyses the role of the actors of spatial production in catering industry in five periods since the founding of Dalian City.According to different periods,it is concluded that the driving forces of the spatial and temporal changes of catering industry are mainly manifested in the different synergies of the government,enterprises and the public.The main conclusions are as follows: 1.The changes of catering culture take the changes of catering enterprises as the carrier.Mainly includes cuisine,mainly from Shandong cuisine to coexistence of a variety of cuisines;cooking raw materials,seafood is still the most important ingredients,but the variety of food ingredients is constantly rich and diverse;in addition,specialty dishes and restaurants,in different periods also have differentmanifestations.2.Changes in the spatial pattern of catering enterprises.During the Russian occupation period,most restaurants were located in Zhongshan Square,pier,railway station and Xigang area.During the Japanese occupation period,most of the major restaurants were located in Tianjin Street and Qingniwa Bridge.The number of restaurants in Xigang District,where most Chinese people gathered,was also increasing gradually,mainly distributed in Huasheng Street and Xinkai Road.During the tortuous development period,the restaurant layout was still dominated by two traditional commercial centers,Tianjin Street and Qingniwaqiao.However,the western new commercial network,Xi’an Road,began to distribute and gather restaurants.At the stage of market-oriented formation,the spatial distribution of restaurants has formed a tripod situation of Tianjin Street,Qingniwa Bridge and Xi’an Road.In the stage of free competition,a first-class center of Zhongshan Square,Xi’an Road,Qingniwa Bridge,and three second-class centers of high-tech Wanda have been formed.The catering distribution pattern is dominated by business circles and blossoms in many places.3.Space-time change mechanism.Natural,socioeconomic and other factors work together,leading to the spatial and temporal changes of the catering industry in Dalian.The spatial production of catering industry in Dalian is the result of a comprehensive game of various forces.Its motive mechanism is mainly manifested in the predominance of power,the passive participation of enterprises and the public,the gradual dominance of capital after the reform and opening up,and the fact that the public has become the determinant of space production in catering industry,playing an increasingly important role. |
