With the rapid development of the tertiary industry and the general improvement of people’s living standard,the consumption demand of the catering has become more and more large.The business forms of catering are diverse,and one of the more representative is the economic type.Chain restaurants,this type of restaurant tends to be relatively high,and the dining time is more concentrated,especially some famous restaurants,often appear a serious queue waiting phenomenon.In reality,restaurants are constrained by many factors such as the scale of the facilities,and the supply capacity may not fully meet the peak customer demand.It is this imbalance between supply and demand that leads to queuing.In real life,the unreasonable configuration of the restaurant’s facilities will cause unnecessary waiting in the queue.Therefore,how to make full use of limited restaurant resources is a key point to consider.At the same time,the layout of resources in the restaurant also affects the service efficiency and therefore needs to be considered.This thesis takes W restaurant as research object.The research found that the restaurant has a series of problems such as large population flow and serious queuing phenomenon during the peak meal period,and through analysis,it is found that there is room for optimization in the layout configuration of the meal and the layout of the restaurant.Therefore,this paper aims to analyze and optimize the dining room configuration combination and regional layout of W restaurant,and find a reasonable meal configuration and layout plan to improve the efficiency of restaurant operation.The research is mainly divided into four aspects.The first is to investigate and characterize the queuing system of W restaurant,clarify the characteristics of its queuing system,and collect data of restaurants.Secondly,establish the combinatorial optimization model to solve the optimal plan,and evaluation of the system’s operational performance indicators.The third is to use matlab to simulate the restaurant queuing system and analysis.Last,use SLP method to design the layout of the restaurant.The research of this thesis has important reference value for W restaurant and other similar type of restaurants.
