Food is the top priority for the people,and safety is the top priority for food.Pasta is a necessity in daily life,and its safety concerns millions of households.Food safety is the lifeline of food production enterprises.Only by firmly adhering to the bottom line of food safety and gaining consumer recognition can enterprises achieve long-term benefits.Food safety management is an active measure taken by enterprises to solve food safety problems.Before food safety problems occur,problems in the food production process are identified through analysis and corresponding measures are taken to eliminate risks,laying a solid foundation for the long-term development of enterprises.This article takes XN Company’s food safety management as the research object,and analyzes the specific measures taken to ensure food safety in the flour production process through literature research,field investigation,and interview methods.The fish bone analysis method is used to analyze the reasons for the problems in food safety management in the six dimensions of 5M1 E,Then,in response to the problem,measures such as using Hazard Analysis and Critical Control Point(HACCP)system,establishing a food safety supervision and assessment system,establishing a food safety training system for all employees,tracing management and analysis of the entire flour production process,and utilizing national flour food risk monitoring data are taken to optimize its food safety management system,and the optimized food safety situation is evaluated.After optimization,the company has made significant improvements in various aspects such as product qualification rate,production efficiency,defect traceability time,and the number of consumer complaints.At the same time,it is proposed to use the PDCA cycle method as a measure to continuously improve the food safety management effectiveness of XN Company,improve the safety of enterprise products,protect consumer rights,and also provide ideas for other flour production enterprises in food safety management.
