Food is the most basic survival material for human beings.Food safety is not only related to people's living standards,but also has a profound impact on social stability and progress.In recent years,frequent food safety incidents around the world have severely hampered people's confidence in food quality and safety.Therefore,the state has paid unprecedented attention to the control of food safety risks.The relevant government departments actively build laws and regulations,take various measures to ensure food quality and safety.Enterprises are also exploring effective measures to control the safety risks of their supply chain,among which the construction of food traceability system is one of the most important.In order to ensure food safety and reduce food safety risks,it is necessary to identify and evaluate the risks in each link of the traceable food supply chain.On this basis,in order to allocate resources more pertinently and improve the effect of food safety risk control,it is necessary to identify the Critical Control Points in the food supply chain.Based on this,this paper identifies and evaluates the security risk of traceable food supply chain and explores the selection method of Critical Control Points of security risk in food supply network,in order to provide reference for the control of food safety risk in China.This paper analyzes the relevant theories of food supply chain,food traceability,risk management and social network analysis.Based on this,the research on the identification of traceable food supply chain security risks and the analysis of Critical Control Points are carried out.The research content of this paper is mainly divided into three parts:The first part is to qualitatively analyze the current food safety situation in China,summarize the food safety incidents and their occurrence characteristics in recent years,and secondly analyze the development of traceability systems at home and abroad and summarize the problems in the construction of food traceability system in China;finally,relying on the existing model of food supply chain in China analyze the development of traceable food supply chain and its hindered factors.In the second part,the process analysis method is applied to identify the safety risks in each link of the food supply chain,and an evaluation model of the safety risks in the food supply chain is constructed considering the weight of risk evaluation attributes.The risk values of each risk factor and each link in the food supply chain are determined by combining the triangular fuzzy number method,the entropy weight method and the European distance method.The third part,on the basis of identifying and evaluating the security risk of food supply chain,a network model of food supply chain based on digraph is constructed,and combines social network analysis method to qualitatively analyze the impact of node location on the transmission of security risks.Based on the risk evaluation results of the second part,a multi-index evaluation algorithm of node importance is proposed to determine the weighted risk value of each node considering the location of node risk transmission in the network,so as to select the critical control points of the security risk in the food supply chain network.
