When sodium nitrite and acrylamide in food are ingested by human body,many adverse reactions will occur.Sodium nitrite interferes with the oxygen transport system in the human body,leading to the irreversible transformation of hemoglobin to high iron hemoglobin in the blood,which seriously impairs the ability of hemoglobin to exchange oxygen.Acrylamide is widely found in fried baked foods and has potential carcinogenic,neurotoxicity,reproductive and cardiac toxicity.Therefore,it is of great significance to develop a rapid,accurate and sensitive detection method for the quantitative analysis of sodium nitrite and acrylamide in food.In this study,based on the flow injection chemiluminescence method,the analytical method for the detection of sodium nitrite and acrylamide in food was established with luminol-hydrogen peroxide as the luminescence system.The main research results are as follows:(1)Study on flow injection chemiluminescence detection of sodium nitriteIn this study,the peristaltic pump parameters,operation parameters,measurement parameters of the flow injection chemiluminescence analyzer and the conditions of luminol solution concentration,p H value and hydrogen peroxide solution concentration of the chemiluminescence system were optimized,and a flow injection chemiluminescence detection method for nitrite in food was established.Under the optimal conditions,the method has high sensitivity.The anti-interference of the method is explored by anti-interference experiment.The accuracy of the method was evaluated by adding recovery experiments and actual sample detection.This method was used for the screening of nitrite content in foods such as ham and pickled vegetables.The results showed that the method had good stability,high accuracy and strong anti-interference,which was suitable for rapid detection of nitrite in food.(2)Study on Flow Injection Chemiluminescence Detection of AcrylamideIn this study,based on the interaction of acrylamide with luminol-hydrogen peroxide system,the parameters of flow injection chemiluminescence analyzer and the concentration and p H value of the solution of the chemiluminescence system were optimized,and a flow injection chemiluminescence method for the determination of acrylamide in food was established.Under the optimal conditions,this method showed a good linear relationship in the range of acrylamide concentration of 1×10-4 mol/L-1×10-7 mol/L.Through the anti-interference experiment,the anti-interference of flow injection chemiluminescence detection method for acrylamide was explored.The accuracy of the method was evaluated by adding and recycling experiments of hemp flower and pot.This method was applied to the determination of acrylamide content in starchy potato chips such as potato chips.The results showed that this method had good stability and high sensitivity,which could be used for the rapid detection of acrylamide in food.
