| Wheat flour is an important raw material in food industry, and it is also an important segment in the wheat industry chain. Wheat flour not only guides the cultivation of wheat, but also provides a guarantee to the food industry for its health development. So the quality safety of the wheat flour products is very important.ISO22000 food safety management system is a highly systematic and tightly structured good system based on prevention to effectively control food safety. It provides an approach based on science and logic to control the biological, chemical and physical hazards in food and overcomes the disadvantages of safety controls upon inspection only.At present, the specific course of action that the wheat flour processing enterprises in our country introduced ISO22000 standard to control quality safety of wheat flour has not been reported. Based on the research status at home and abroad, food safety management system specifically for the wheat flour processing enterprises was proposed in this study. Based on analysis various possible shortages or deficiencies in the process of wheat flour production, some key control points were set up. At the same time, some thresholds are founded and HACCP plan is set up. We would prevent or eliminate or reduce the hazard of the finished products to an acceptable level through the effective combination of HACCP plan, prerequisite program and operational prerequisite program. The effect of ISO22000 food safety management system was identified. Foreign matter of wheat, ash content of cleaned wheat and ash content of wheat flour were detected. The results showed that foreign matter of wheat,ash content of cleared wheat and ash content of wheat flour were decreased obviously. Therefore it was effective to apply ISO22000 food safety management systems to the wheat flour processing enterprises.The application of ISO22000 food safety management system in XF flour Co., Ltd improves the company's quality management level and provides an operation template for wheat flour enterprises. It also can provide a reference in further research for ISO22000 in the wheat flour processing enterprises. |
