Pleurotus ferulae Lanzi was used as material to study its processing technology of cans. The new processing technology of cans was found through single fact and Orthogonal test. Drying technology of Pleurotus ferulae Lanzi also was a important part of the experiment. The change of color, in the course of drying process was controlled by the way of microwave heating and other ways .We also make research on the storage condition of fresh Pleurotus ferulae Lanzi. In order to find the reason of color changes, we make a lot of study on the characters of PPO in the fresh Pleurotus ferulae Lanzi. The qualitative analysis of PPO was identified through adding some materials. After researching the condition of extraction of Polysaccharides, making density by alcohol and eliminating protein by sevag way, the best way of Pleurotus ferulae Lanzi Polysaccharides was determined- We also do some experiments on the characters of Pleurotus ferulae Lanzi Polysaccharides.
