The extraction techniques of amygdalin from apricot were investigated, including pre-treatment, analyses, amygdalin determination, the optimum solution in extraction, crystallization and separation etc.The second-derivative spectra method can be employed in the determination of the amygdalin content. The stability, precision and recurrence of extracting sample in the experiments are satisfactory. This method is distinguished because of the quickness and accuracy.This thesis carried a systematical study on the extractions techniques of the amygdalin by refluxing and ultrasonic extraction method. The enzyme-inactivated and fat-skimmed material and 80% ethanol as the solvent were used in the extraction of amygdalin. The optimum extraction techniques were determined by the orthogonal experiment which was based on the single-factor experiment. The optimum conditions of refluxing Temperature: 70℃, Ratio of material and fluid: 1:18(W/V), Extracting time: 40min. The optimum conditions of ultrasonic extraction Temperature: 80℃, Ultrasonic power: 90W, Ratio of material and fluid: 1:18(W/V), Extracting time: 30min. With the securing of yield ratio, the extraction time was reduced and the extraction efficiency was increased.The cover-dipping method was used in the experiments, namely the extracted fluid will be used in the next extraction. The functional contents can be reused effectively. Besides the heat in the concentration process can be reduced for the purpose of low-cost production. Compared with the traditional method, the cost was reduced by the new method which is of more practical value.Crystallization was the key step in the process of extraction of amygdalin. Considering the purity and crystallization ratio of amygdalin, the amounts of ethanol and ether was chosen as 1:18 and 1:0.4, crystallization time was 36h. The purity and yield ratio of amygdalin were 80.05% and 7.1% under above process, and the purity of re-crystallization was 95.16%. The number of crystallization can be chosen freely based on the purity of raw material.
