The thesis described the basic principles and the applications of flow injection chemluminescence in food analysis. The main content consisted of two parts.The research background is presented in this part. Based on the fundamental theory of chemiluminescence and combined with our research work, the main CL systems were simply reviewed and the principle of luminol-peroxide hydrogen, luminol-potassium ferricyanide, luminol-dissolved oxygen, luminol-potassium permanganate, luminol-myoglobin and luminol-iodide chemiluminescence system were introduced in detail, using about 150 references concerning chemiluminescence analysis.For its high sensitivity, low detection limits, simple device, Chemiluminescence has been successfully and widely used in food analysis. Luminol Chemiluminescence System is the most useful system. Luminol with different oxidants such as: Luminol-iodide system, Luminol-dissolved oxygen system, Luminol-myoglobin system, luminol-potassium permanganate system, Luminol-hydrogen peroxide and luminol-potassium ferricyanide system. Luminol Chemiluminescence System was widely used in environmental, biological, food and other fields.As one of the most important and familiar chemiluminescent compounds, the chemiluminescent mechanism of luminol had been studied. This work proposes five simple, fast, accurate and inexpensive methods for the quantification of sudan I, benzoyl peroxide, vitamin C, Fe3+ and kaempherol, based on the chemiluminescence reactions of luminol-potassium periodate, luminol-myoglobin and luminol-dissolved oxygen combined with flow-injection technology. Picograme level of Sudan I in chili sauce, nanograme level of benzoyl peroxide in wheat flour, nanograme vitamin C in vitamin C tablets, tomatoes, and human urine, nanograme iron in spinach and nanograme kaempherol in honey, were detected by the proposed methods, respectively.
