The thesis focuses on the research and application of patulin and capsaicin chemiluminescence(CL) behavior with various luminol CL systems.The mechanisms and applications of various CL systems for the food and biological analysis were simply reviewed, using 138 references concerning CL analysis,based on the fundamental theory of chemiluminescence(CL) and combined with my research work.Patulin,4-hydroxy-4H-furo[3,2-c]pyran-2(6H)-one,is formed in apples decayed by certain genus of molds,particularly Penicillium expansum,easily transfers into apple juice during processing owing to its solubility in water.Carcinogenic,teratogenic and mutagenic effects of patulin have been reported.The World Health Organization recommends limiting its contents in foods to 50μg kg-1.In this work,it was found that patulin could enhance the CL intensity produced by luminol and hydrogen peroxide in alkaline medium.The system responded linearly in the concentration range from 0.05 to 80.0 ng mL-1 with the detection limit of 0.01 ng mL-1(3σ).The proposed method was successfully applied to the measurement of apple juice samples.It was found that patulin could inhibit the CL generated from luminol and dissolved-oxygen system significantly.The decrement of chemiluminescence intensity was linear with the patulin concentration over the range from 0.04 to 10.0 ng mL-1(r2 = 0.9989),with the detection limit of 0.01 ng mL-1(3σ).The proposed method has been applied successfully in the determination of patulin in apple juice.Capsaicin(trans-8-methyl-N-vanillyl-6-nonenamide) is the principal alkaloid derived from capsicum fruit extracts of different of Capsicum species.Capsaicin has many pharmacological effects such as analgesic,anti-inflammatory,promoting appetite,improve digestion,and anti-bacterial insecticide.Based on the inhibitory effect of capsaicin on the chemiluminescence(CL) reaction between luminol-dissolved oxygen,luminol-myoglobin, luminol-KIO4 and luminol-H2O2 in flow injection(FI) systems.Four new methods were established for determine capsaicin in chili powder.
