Gardenia jasminoides Ellis is a kind of a small typed evergreen shrub of Rubiaceae Gardenia. The gardenia seeds oil content is close to that of soybean. And the fatty acid composition which mainly contained linoleic acid is nearly single. The contained linoleic acid is one of the essential fatty acid in human body. it can't be synthesized by human but be uptaken from foods.In this dissertation, gardenia seeds the Spectrum No.1 from Fuding, Fujian Province is the experiment material. Organic solvent and super critical CO2 were adopted to extract the gardenia seed oil , and using micro-encapsulation technology. It developed a new way of processing gardenia deeply. The results were summarized as follows:(1) Organic solvent was adopted to extract gardenia seeds oil. The best conditions for processing organic solvent extraction were temperature at 60℃and time for time for 3 hours; Proportion of gardenia seeds and solvent was 1:5; the extraction rate of the gardenia seeds oil was 16.67%.(2) The optimum technological condition of extraction: particle size 50 meshes, working pressure 35MPa, temperature 40℃, carbon dioxidefloe rate 25kg/h, extraction time 1.5h. The extraction yield of gardenia seeds is 22.95%. The result showed that extraction of SCFE is excelled than petroleum ether, and extraction rate of gardenia seeds oil is higher than organic solvent. The product quality is unparalleled by SCFE, without remainder solvent, so it is adapted to be embedded with micro-encapsulation.(3) Determined the super critical CO2 gardenia seeds oil,analysised the fatty acid by gas chromatography, the result was: C14:0=0.43%,C16:0=22.63%,C16:1=0.21%,C18:0=3.57 %,C18:1=23.94%,C18:2 =46.86 %,C18:3 =0.23%,C20:0=1.48%; The acid value is 12.6mgKOH/g,hydrogen peroxide is 1.05mg equivalent/kg,color is R0.4,Y5.4,iodine value is 122gI2/100g ,saponification value is 184mgKOH/g,refractive index is 1.4660。(4) The micro-encapsulation technology was studied. Taking the garlic oil extracted by SFE as material, the parameters of producing stable micro-capsulation were established by orthogonal experiment: acacia gum being shell material, garlic oil 20% being core material, emulsification temperature 30℃. Light yellow micro-capsule powder with the diameter of 7~10μm is acquired and easy to melt.
