The fruitbody of the jew's-ear is the gum quality body, not only the abundant nourishment, but also having the very strong adsorption. It can adsorb dust and impurity of digestive system within the human body outside the body, so it is engaged in the person of spinning work. The yield and area of jew's-ear are the biggest all over the world. The fog cultivation area with a whole light is the biggest. The way manages conveniently, the yield is high and the quality is good. The humidity management is the key technique of fog cultivation with a whole light. It controls time of spraying water and the amount of spraying water experientially, and is hard to attain high produce and steady produce. Therefore, the experiment totally establishes 5 different time of spraying water and the amount of spraying water. It studies the effect of different treatment on content of water in the spawn run, content of spawn run, extra cellular enzyme activities, the esterase isoenzyme band, yield and quality. It aims at the jew's-ear humidity physiology to lay the theories foundation for further study, and provides science method of spraying water for the fog cultivation with a whole light.1 Along with the growth of the jew's-ear, content of water in the spawn run in all treatments present respectively increasing. Among them, the content of water in the T3 ( every time 25 minute, spray the 3.6m3 totally) is highest, it is the second of T2 (every time 20 minute, spray the 2.8m3 totally), it is the lowest of T5 (every time 35 minute, spray the 5.2m3 totally). Content of water in the spawn run in the T2(every time 20 minute, spray the 2.8m3 totally) and T3(every time 25 minute, spray the 3.6m3 totally) anticipate to the content of water in the Tl(every time 15 minute, spray the 2m3 totally).2 The different method of spraying water influence the activity of extracellular enzymes (cellulose, hemicellulose, lignin enzyme and amylase), but the variety regulation of the activity of extracellular enzyme is alike.(1) Along with the growth of the jew's-ear, activity of cellulose enzyme( CMC, FP and β -glucose enzyme) presents respectively the trend of increasing. It attains the biggest value in the fuitbody. It attains the lowest value after harvest.(2) Activity of lignin enzyme( laccase and peroxidase) presents respectively the trend of reducing, even disappears in the final-period.(3) Amylase activity presents the trend of reducing from the full spawn-run stage to the first harvest.
