Stropharia rugoso-annulata Farlow belongs to Basidiomyeotina, Hymenomyeetes, Agarieales, Strophariaceae, and Stropharia. Stropharia rugoso-annulata Farlow is a kind of Preeious fungus used for food and medieine, which has rich nutrition and special health value. Extraction technology, the anti-oxidantive effect and the antibacterial activity of Stropharia rugoso-annulata Farlow polyphenols were studied in this paper. Therefore, an important recommendation for developing deep-proeessing products of Stropharia rugoso-annulata Farlow polyphenols were offered.(1)An extraction proeess of polyphenol from dried Stropharia rugoso-annulata Farlow was studied in this paper. Ethanol was used as the solvents and the material studied consisted of dried Stropharia rugoso-annulata Farlow. Different faetors were considered such as the concentration of solvent, extract temperature, material-water ratio, extract time, and frequency. And the optional conditions for organic reagents ethanol extraction were:30% ethanol solvent was used to extract polyphenols from the dried Stropharia rugoso-annulata Farlow by 1:20 under 70℃one times and 1 hours.The extraction rate could reach to 11%.Ultrasonie was used as the solvents and the material studied consisted of dried Stropharia rugoso-annulata Farlow. And the optional conditions for organic reagents, ultrasonie extraction were:30% ethanol solvent,240W ultrasonie power was used to extract polyphenols from the dried Stropharia rugoso-annulata Farlow by 1:20 under 60℃one times and 6minute.The extraction rate could reach to 6.71%. Mierowave was used as the solvents and the material studied consisted of dried Stropharia rugoso-annulata Farlow. And the optional conditions for organic reagents, mierowave extraction were:35% ethanol solvent,640W mierowave power was used to extract polyphenols from the dried Stropharia rugoso-annulata Farlow by 1:20 one times 2.5minute.The extraction rate could reach to 5.319%.(2)The effect on scavenging·OH, Total anti-oxidation and·O2- of Stropharia rugoso-annulata Farlow polyphenols were studied by research kit, which were compared with the effect of vitamin C. The result showed that Stropharia rugoso-annulata Farlow polyphenols could effectively scavenge·OH and·O2- in the experimental range, and the Stropharia rugoso-annulata Farlow polyphenols had stronger seavenging ability on·OH and·O2-. Inaddition, the Total anti-oxidation of Stropharia rugoso-annulata Farlow polyphenols was studied. The result showed that Stropharia rugoso-annulata Farlow polyphenols were effective in lengthening the to guarantee the quality.
