The present experiment was designed to study the effect of different doses of phytosterol's putting into milk for the normal and high-fat mice's blood fat and body fat by the phytosterol's emulsification,the foundation of mice's high-fat and the experiment to feed mice,and got the functional milk.The function of the milk's lowing fat was studied in order to offer experimental parameters and academic references to the exploiture and production for our country's functional milk.1.The emulsification for phytosterol's putting into milkNine different emulsifiers were chosed to filtrate the appropriate emulsifiers by single-factor experiment and the single and composite experiment was based on the upwards experiment,the emulsification conditions were optimized by emulsification stability.The results show that it was diffcult for phytosterol to emulsify in milk,single emulsifier can help its emulsification but can't completely,then the multiple emulsifiers can,and the best emulsifies and appropriate dosage are 0.2%tripolyglycerol monostearate and 0.1%sodium stearoyl lactylate.2.The study for phytosterol's lowing fat for noamal mice50 four-week-old and male Kunming mice were randomly divided into five groups and fed diet and milk adding into phytosterol with the dose of 0mg/d/one mouse,7.5mg/d/one mouse,15 mg/d/one mouse,30 mg/d/one mouse,90 mg/d/one mouse for 4 weeks and the effect of the blood fat and body fat was studied.The results show that weight gain,body fat and intra-abdominal fat were decreased when mice were fed milk with different doses of phytosterol,and there is a linear programming between the intra-abdominal fat and body fat at a fight range by different doses of phytosterol.The liver weight and liver coefficient were also decreased,TC, LDL,AI were decreased(p<0.05),HDL was increased(p<0.05),TG was not significantly (p>0.05).The effective dose for phytosterol's putting into milk to get availability function was 15 mg/d/one mouse.3.The foundation of high-fat mice model40 four-week-old and male Kunming mice were randomly divided into two groups,20 for one group,A group was fed basic feed and B group was fed high-fat feed,three weeks later,10 mice from each group were chosed and blood serum TC,TG were measured,TC was significantly(p<0.05)while the TG not(p>0.05),the high-fat mice model is unsucceeded.Five weeks later,blood serum TC,TG were significantly(p<0.05)by the same way and the the high-fat mice model is unsucceeded.4.The study for phytosterol's lowing fat for high-fat mice120 four-week-old and male Kunming mice were randomly divided into ten groups and feed and water freely at the first week.They were marked with A,B,C,D,E group and a,b,c,d,e group.There are 20 mice in group A and fed basic feeding duiring the experimental period,20 mice in group a and fed high-fat feeding.There are 10 mice in every other groups,after the high-fat mice model was founded,the study for phytosterol's lowing fat for high-fat mice was started.The mice in B,C,D,E group were fed with basic feeding and b,c,d,e group with high-fat feeding with the dose of 0 mg/d/one mouse,7.5 mg/d/one mouse,15 mg/d/one mouse,30 mg/d/one mouse,90 mg/d/one mouse for 45 days.The results show that weight gain,liver weight and intra-abdominal fat were decreased when mice were fed with different doses of phytosterol into milk,the body fat was not decreased significantly(p>0.05),TC,AI and liver TC were decreased significantly(p<0.05),TG and liver TG were not significantly(p>0.05),LDL was decreased,HDL and LPL were increased significantly(p<0.05),and lps was not significantly(p>0.05);sevel parameters in basic feeding group were lower than high-fat feeding group.
